Pennsylvania Coal Region Barbecue

The whole family loved this! It's a quick and easy sloppy joe recipe without the packets. Will definitely be making this again. I was a little worried about letting it simmer for 15 minutes because there wasn't much liquid left, but I never had any issues. Perfect flavor and not too runny that it soaks into the bun! Great with homemade shells and cheese!

Sweet and Sour Chicken Tenders

Awesome!!! I used red wine vinegar because that's all I had on hand, and I added pineapple juice from a small can of crushed pineapple. I also put 1 red pepper, 1 green pepper, and the crushed pineapple in the dish along with the chicken while baking. It was perfect! Not too vinegar-y. I think the pineapple juice balanced it well!

Basil Chicken over Angel Hair

Absolutely LOVE this recipe! My husband and 2 yr old love it too! I've made it several times, several different ways. I've used canned tomatoes (drained) and even canned chicken in a pinch. This recipe is so versatile! Definitely going into "my favorites" cook book.

Tzatziki II

Great recipe! I've read a couple other reviews that suggest to lightly salt the cucumber and set on paper towels to get some of the water out... If you would rather add the salt at the end like the recipes calls for, do what I did. I lined the bowl I shredded the cucumber in with a paper towel and then patted the top dry. It came out perfectly! Also, I substituted dill for the mint.

Shrimp Scampi Bake

I followed the recipe exactly. You will have extra sauce this way, but I mixed it with angel hair the first time and fettuccine this most recent time. It's delicious! Husband and 2 yr old both loved it too! Goes great with a little homemade cheesy garlic bread too!

Taco Seasoning I

Yummy! Tastes just like store bought! I did add one cube/packet of beef bouillon though to give it a little more meaty flavor. Turned out great! Husband and 2 yr old love it!

Baked Pork Chops I

Super Yummy! Can't rave enough! I shortened the frying time to 3:30 on each side and baked them for 20 min before the gravy and 20 min after. I also doubled the gravy recipe and added some sauteed sweet onions. Everyone, including my 3 yr old, loved it!

Yummy Honey Chicken Kabobs

I doubled the marinade because it just didn't seem like enough juice and added yellow squash and zucchini to the kebabs. I put the chicken and veggies on separate kebabs too. I only marinated it for about 4 hours and it was perfect! Even my 3 yr old loved it!

Easy Tasty Fried Chicken
