About this Cook
I am a stay at home mom of 2 boys, 4 and 6.We are a military family and just got posted to Sheawater NS from Oromocto NB this past summer. We are very much enjoying being closer to our family :) I enjoy baking, playing with my boys, spending quality time with hubby, watching tv/movies, and going for coffee with friends.
My favorite things to cook
I guess my favorite meal to make is sheppard's pie, as it is pretty simple yet delicious. My favorite dessert to make is chocolate covered peanutballs, usually a christmas thing.
My favorite family cooking traditions
Don't really have any yet. Made chocolate chip pancakes ( with a recipe from this site) yesterday, so maybe do a pancake Sunday breakfast every week.
My cooking triumphs
Any recipe that turns out is a triumph in my books :P
My cooking tragedies
First time I made fried chicken, the chicken was undercooked. I cried lol. Until I found the right recipe, everytime I made fudge it never hardened so it ended up being sludge lol *edit* I finally made a pan of fudge successfully! Have burned a few things on occasion. You live and learn!

Shortbread Cookies II
I just made these to take to a social gathering and of course I had to try them first and wow, so good! I followed the recipe exactly, except I didn't have a cookie press or cookie cutters, so I chilled the dough for 30 minutes and rolled in to walnut size balls, rolled them in powdered sugar and suggested by another reviewer, and then pressed down on them slightly with the bottom of a teacup. After they were cooled, I melted some milk chocolate chips, put in a ziploc bag, cut the tip, and drizzled it over the cookies. They look great, and taste even better. Can't to see how my friends enjoy them!

Slow Cooker Ham
So simple and so yummy! I'm not a huge ham lover but decided to try this for Easter dinner. It was so moist and flavourful. I did not cook for 8 hour though as listed. 5 hours on slow was perfect :)

Famous Butter Chicken
This is the best chicken I have ever made/tasted! I am not a huge fan of white meat, cause I find it too dry. But this was so juicy and flavorful! I used Pinehill chicken breasts ( can get a box of about 20 for $29.99 at Sobeys) dipped in eggs and then crushed Ritz crackers and spices. Placed the pieces in a shallow baking pan and then put the pieces of butter all around. Baked for about 40 minutes, checking it twice in between to spoon the juices over top. I have made this several times now. I love it, my husband loved it, my son loves it, my friends loved it, and my parents loved it, and they are hard to please lol. This will definately be a family favorite for years to come :)
