The recipe is awesome as written. The second time I added vanilla and they were even better! I made these for Christmas gifts and everyone loved them. My one complaint is, like others, I didn't get anywhere near 6 dozen cookies out of this. I got almost 3 dozen. I found the secret to keeping it light and airy was to make sure to cream the sugar and butter really well before adding other ingredients. My daughter made a batch and didn't flatten them. When they were still warm she rolled them in powdered sugar. YUM!!! Thanks for a great recipe!

Corn Chip Salad
This is an often requested dish in my family. I make it a little different. I don't put the beans in (never actually thought of that!), I mix a packet of Taco Seasoning with the Thousand Island Dressing in a bowl first then add it to the salad. I also use Nacho Cheese Doritos crushed up and added just before serving. My 21 year old nephew requests this every single time we have a family gathering. Another family friend asked me to make it for his wedding reception!

Daddy's Fried Corn and Onions
I have made this twice in the last 2 weeks! The first time I made it following the recipe exactly and my 12 yr old who actually prefers broccoli to corn loved it! I made it again last night for my brother and sister-in-law with the following changes based on other reviews... 1. Caramalized onions first in approx. 1 Tbsp butter and about a teaspoon of bacon grease. 2. Added a tiny bit of garlic powder, seasoning salt and pepper instead of just regular salt and pepper. 3. During the last couple of minutes I sprinkled about 1/2 teaspoon of sugar over the whole thing, stirred then covered for 3 or 4 minutes. Result? Rave reviews!!!! Thanks for a great recipe that even my corn hating daughter loves!
