Basic Cream Cheese Frosting

This is the best recipe!!! I ran out of icing and didn't have enough sugar to make another batch, so I used a can of cream cheese icing...ugh. The store bought can didn't even compare! So lesson learned...take the time to make another from scratch, or double up on this recipe for a 2 layer cake. It also spreads twice as smooth as canned icing. One good idea I tried today that actually worked: Do you have a circular rotating spice rack? I used one of those that I already had in my cupboard to place my cake on, then rotated it as I iced the cake. It was smooth as satin!

Pumpkin Cake III

I used two 9" round cake pans for this recipe and the only change I made was suggested by other readers: cut oil down to 3/4 c. and add applesauce for the remainder. I noticed the CAN of pumpkin did not specify which size can. I believe it is referring to a 15 oz. can. I had a 29 oz. can and that seemed to be sufficient. Tasted moist and amazing! For a pretty presentation, use sliced almonds as petals for daisies, and your favorite colored M&M's, Resses or Skittles candies for the flowers center.

Slow-Cooker Chicken Tortilla Soup

This soup packs some serious heat and tons os flavor! If you love Mexican like I do, try this one. Save yourself work and use a rotisserie chicken. Added black beans and used fritos and lots of cheddar cheese on top. MMMMM!

Too Much Chocolate Cake

To die for! Don't bother telling anyone it starts with a cake mix. Its extremely moist! I didn't care too much for the chocolate chips inside, so think maybe next time I will look for 'mini' chocolate chips to use instead.

Apple Turnovers

Wonderful... a few tips: #1: when working with the dough, make sure its not too warm, just room temp or slightly colder to start out with, otherwise it will be too sticky to unfold and you will end up rolling out anyways. #2: Do not overstuff. #3: Watch them the last few minutes of baking. You want golden brown, not brown. Its easy to burn the tops of these.

Chiles Rellenos (Stuffed Peppers)

Very yummy. I used canned tomatoes with chili peppers added to make less work. It added some heat also. I struggled getting the outside crust to stay on though. Not sure what the trick is? Next time I won't let the peppers get so overdone under the broiler.

Very soft, actually almost too soft in the middle. The larger the cookie, the softer the middle is, and the more the edges break away from the middle. I will make these again!

Best Egg Rolls

I make this recipe with chicken instead of pork and its excellent that way too. The peanut oil makes for a lot of flavor. Just a hint: After taking the egg rolls out of the oil, prop them upright to set the oil drain off, otherwise its a greasy soggy mess. I don't recommend reheating these the next day. They become soggy mush.
