Joey's Peanut Butter Cookies

Very soft, actually almost too soft in the middle. The larger the cookie, the softer the middle is, and the more the edges break away from the middle. I will make these again!

Too Much Chocolate Cake

To die for! Don't bother telling anyone it starts with a cake mix. Its extremely moist! I didn't care too much for the chocolate chips inside, so think maybe next time I will look for 'mini' chocolate chips to use instead.

Slow-Cooker Chicken Tortilla Soup

This soup packs some serious heat and tons os flavor! If you love Mexican like I do, try this one. Save yourself work and use a rotisserie chicken. Added black beans and used fritos and lots of cheddar cheese on top. MMMMM!

Pumpkin Cake III

I used two 9" round cake pans for this recipe and the only change I made was suggested by other readers: cut oil down to 3/4 c. and add applesauce for the remainder. I noticed the CAN of pumpkin did not specify which size can. I believe it is referring to a 15 oz. can. I had a 29 oz. can and that seemed to be sufficient. Tasted moist and amazing! For a pretty presentation, use sliced almonds as petals for daisies, and your favorite colored M&M's, Resses or Skittles candies for the flowers center.

Basic Cream Cheese Frosting

This is the best recipe!!! I ran out of icing and didn't have enough sugar to make another batch, so I used a can of cream cheese icing...ugh. The store bought can didn't even compare! So lesson learned...take the time to make another from scratch, or double up on this recipe for a 2 layer cake. It also spreads twice as smooth as canned icing. One good idea I tried today that actually worked: Do you have a circular rotating spice rack? I used one of those that I already had in my cupboard to place my cake on, then rotated it as I iced the cake. It was smooth as satin!

Best Big, Fat, Chewy Chocolate Chip Cookie

I had high hopes for these because of so many positive reviews. I am not sure if it was the butter or what, but the taste was less than desirable! And as they were baking, they never seemed to brown till around the 17-20 minute mark. I did only about 1/8 cup sized cookies, and to have to bake a cookie for that long is crazy! I will never even attempt these again.

The Best Rolled Sugar Cookies

I added 3 cups sugar instead of 2 and found the taste sweet enough to eat without icing! Very tasty this way. I also had to gradually add at least another 3/4 cup of flour or so as I was rolling/cutting out cookie dough, because it was very sticky, impossible to handle. A couple of tips however: #1: Make sure the dough is rolled no thinner than 1/2 inch. Otherwise, its difficult to get off of the countertop, even if your surface is floured. #2: Keep remaining dough in fridge or freezer as you are working. #3: When judging the 'doneness' of a cookie, it should not be golden brown on the edges, unless you are ok with a crisp cookie. If you want a completely soft cookie, it should be done no more than eight minutes into baking time, and look white when you pull out of the oven. #4: DO GREASE THE PAN!!! I used Pam butter flavored cooking spray. Of course, my tips are all my personal taste...hope this helps someone!
