Black Bean and Corn Salad II
I added some garlic powder, black pepper and cumin. Also used a jalapeno instead of bell pepper, next time will probably use a green chile. I ate way too much with crackers for lunch!!

Tex-Mex Turkey Soup
To me tomato soup is too sweet and bouillon too salty. I will use canned broth-low sodium & fat, then less water. Also mexican style tomatoes or tomatoes & green chiles and maybne a can of mexican tomato sauce. That may be a local product but it is spicy good! Also for taco soup I cut corn tortillas is strips & bake instead od purchased tortilla chips-less fat & salt.
