Homemade Tomato Sauce I

Excellent recipe that I have used both with the garden harvest and in the interim with canned crushed tomatoes. I usually use baby carrots and pull them out with the celery and bay leaf. I don't know if it makes any difference but it always comes out great! We usually freeze some for later as well.

Goat Cheese Stuffed Tomatoes

This actually works perfectly as an appetizer/finger food (could even use cherry tomatoes) I used Romas from the garden as a test and it came out wonderfully! I can't imagine stuffing a full size tomato with goat cheese. I mixed basil paste into the goat cheese and added a small amount of garlic salt. Rolled the tops in the bread crumbs and broiled for about 5 min. I forgot the peppers until after I filled them, but mixed it into the leftover goat cheese mix and decided it was good either way!

Wisconsin Five-Cheese Bake

Made it exactly as instructed. It was dry and kind of dull flavored. It just tasted like hard cheese and italian seasoning. We didn't even bother refrigerating the leftovers, which is unusual because my husband will eat pretty much anything.

Four Cheese Macaroni

We loved this. I did make a few changes, but kept the process the same. I skipped the eggs. I've used them before and didn't quite like the texture. I did like that this recipe doesn't make a roux (I like mine cheesey and not too creamy) Also skipped the cheese food and salt. Used heavy cream. Used cheddar, monterey jack, havarti and applewood smoked gruyere. Also threw some bread crumbs on top, but prepared it otherwise the same.

Rockin' Salsa

Made a half sized batch of this using stuff from my garden. Used a jalapeno, a habanero, a cayenne and a lot more tomatoes than onions. Kept the rest the same, except I omitted the cayenne powder because I didn't know how hot it would end up. It turned out awesome, and not all that hot but very sweet with a good bite. I don't even really like salsa, but I canned this stuff and I've personally eaten three jars this month. Next time I'll make it hotter and give it out.

Sweet Potato Casserole II

We really liked this variation over the soufflé types. It's a very straightforward recipe without all the "fluff". The orange juice is key just add a little at a time so it's not too runny. The only thing I did differently was to boil the potatoes and then peel, and added a pinch of nutmeg.

Slow Cooker Thai Pork with Peppers

We really liked this. I had some bone in pork chops I needed to use, and just eliminated the chicken broth. Then just took the bones out once they cooked down. I made a lot, and we served it over rice and had plenty for leftovers. I didn't make too many changes this time, but it seems like a pretty versatile recipe and I'll probably play around more in the future.

No-Bake Crispy Potato Chip Mac and Cheese

We weren't fond of the chip topping. I used sharp cheddar kettle chips. The macaroni itself was very good, but the whole process was pretty labor intensive. It's still just macaroni and cheese. If I bothered to make it again I would just use a regular crumb topping.

Baked Stuffed Tomatoes modded

We loved these! We had an abundance of tomatoes in our garden this year, so this was a great way to put them to use. I also added a little bit of green pepper to the mixture and just added rice until it looked like I had enough. Also mixed some parmesan in with the bread crumbs, it did not really need cheese in the mixture.

Herb-Glazed Roasted Turkey

I made this for Thanksgiving last year and everyone loved it! I was afraid it would be too sweet or taste too much like honey but all of the flavors blended perfectly! I made gravy using some drippings and the "savory turkey gravy" recipe and everyone wanted to take leftovers home!

Sweet and Savory Slow Cooker Pulled Pork

I've made this a few times and it's excellent. I didn't marinate or bother browning it. Maybe that's why the root beer wasn't overpowering. I used Stewart's root beer, and made extra mixture to add to the crock as needed. Sometimes I use prepared sauce, sometimes I make my own. Either way its great.
