Bacon Jack Chicken Sandwich

This is the second time I've tried this recipe. The first time I made it, I thought it was great! This time, I changed a few things. First, I didn't use the pickels, second, I swaped hamburger buns for Organic Italian Flat Bread cut to sandwich size. I cooked the Bacon first and reserved the Drippings. I flattened a large Chicken Breast (enough for 3) between plastic wrap with a mallet. I mixed the Poultry Seasoning with the Bacon Drippings and rubbed over chicken. After searing the chicken on both sided on the grill, I moved it to the warming rack to finish cooking, turning a few times. Also, I split the bread and cut out the extra bread on the inside then placed them on the grill to toast. After the chicken was fully cooked, I took it off the grill and cut it into portion sizes, added the Bacon, Pepper Jack Cheese, Mozzarella, and Ground Black Pepper, then returned them to the warming rack. When the cheese melted, I placed them on the bread, added the condiments, including a little mayo. It was incredible! My wife said she would have gladly payed for this in a restaraunt, and that we could have it again the next day.

Grilled Caribbean Chicken Breasts

Excellent, easy, and delicious! I didn't have fresh oranges, so I used a good quality orange juice and sub'd with the Lime Zest. After reading the other reviews, I added a tablespoon of Honey and doubled the Hot Sauce. I also added a splash of Worcestershire Sauce. I beat the chicken to an even thickness between plastic wrap and marinated in a plastic freezer bag for approximately 30mins. Cooked on a gas/hybrid grill which adds some charcoal flavor. Sprinkled with Parsely and served. Because the chicken was flattened, it easily absorbed the marinade, so long marinating times aren't needed. Tender and juicy! I will be adding this one to my "CookBook"! Thank you.

Spicy Grilled Shrimp

Of course, ratings are from personal preference. Some would give this a 5 star. I made this exactly as per the recipe the first time, and found it lacking a bit in the "sweet" department and WAY too salty. The next time I made it, I upped the Honey and Orange Juice by a TBS, added a splash of cider vinegar, and cut out the salt. It was PERFECT! Thank you very much for this recipe!

Grilled Marinated Shrimp

I thought this recipe was Great!, but I'm a fan of big bold flavors. My wife says that the flavor was too much, and I can see where she's coming from. I think marinating for only 30mins, or even just basting with this would be fine, as the grill adds some great taste to this as well! Thank you!
