Pumpkin Cheesecake I

I made this for my dad who is bedridden due to recent surgery, so I used low fat cream cheese and Splenda to try and make it a little healthier. It was a little dry for some reason but when paired with ice cream or simply covered in whip cream, it was perfect.

Garlic Red Potatoes

Mmmmmmmm. As a potato lover, these really hit the spot. Next time I will use a little less butter (there was a pool left in the bowl) and with the tang that the lemon gives it, you can cut the salt in half.

Famous Coconut-Almond Balls

Red Velvet Cupcakes

Pumpkin Cream Cheese Muffins

These turned out well. Super moist. One batch made about 20 muffins for me and I made a little more of the streusel topping because I loved it so much. I liked these and I'm not a fan of pumpkin.

Spinach Brownies

Four Cheese Macaroni

Very good macaroni recipe. On my first batch I used 2 eggs and it was a little funky so for the next batch I only used 1 egg and it turned out great. Very creamy and gooey. I added more cheese because I am a cheese-o-holic. I also used 2 cups half and half like other reviewers mentioned.

Marbled Almond Roca

Yum! I made a bunch for Christmas and it was a huge hit. I followed the recipe exactly except I used about 3/4 cup of each type of chip, simply because I love chocolate. I found that sometimes not all the chips would melt enough to spread so I laid a towel or some plastic wrap over the pan for a few minutes.

Holiday Peppermint Bark

Simple, delicious recipe. Made a bunch for Christmas. It is good with just the layer of white chocolate but it's also very good with a layer of semisweet on the bottom. I don't like the look of it when you add enough crushed candy to make it taste really minty so I would definitely add peppermint extract to the chocolate. Even if you are only doing the layer of white, the extract makes it really taste like peppermint.

Grandma's Green Bean Casserole

This will turn anyone who hates green bean casserole into a lover. The trick is to use fresh steamed green beans instead of canned. If you use canned it is really salty, too mushy and the sour cream is way too strong. But if you use fresh green beans everything is perfect. I also mixed the Ritz with the classic French fried onions because I like a really crispy top.

I made these and took them to work. They were a big hit with all my coworkers. I work nights and something like this is just the pick-me-up I need! My coworker said "If I wasn't married with a kid on the way, I would ask you to marry me."

Easy Decadent Truffles

TO DIE FOR! I made these for work and they were gone in 20 minutes. I made half with the vanilla and half with almond extract. I also covered each with almond bark and then drizzled white chocolate over the top and coated with nuts. I will definitely be putting these is the Christmas goodie bags this year!

Apple Pie by Grandma Ople

This pie was amazing and I'm not a pie fan. I made it for a work party and got so many compliments. I used 4 Granny Smith apples and 4 Fuji apples. The sweet with the sour really gave it a kick. When buying the ingredients the clerk at the store told me that his secret to a great apple pie is to grate orange peel over the top and that made it even more amazing!

Elizabeth's Extreme Chocolate Lover's Cake

I made this cake for a coworkers birthday party. He suggested that I make a simple box cake, but where's the fun in that? After everyone had tried it they said it was the best chocolate cake they had ever had! I doubled the recipe and made a 4 layer cake. The first batch I added regular water instead of boiling because the ingredients didn't specify temperature. It turned out fine, maybe a little denser. And there is a flaw with the vanilla; the ingredients say 1 1/2 tablespoons vanilla and the directions say 1 1/2 teaspoons vanilla. I used 1 1/2 teaspoons and it turned out great. Thanks for this recipe!

Roasted Vegetables

I love roasted veggies. I also add chopped carrots and zucchini. A good twist on these is to add a little horseradish sauce to the mix. It really adds a zest!
