Traditional Pita Breads

I used 2 tbsp olive oil instead of the shortening, and "baked" the pita bread two at a time (to avoid running the oven in the summer), covered in my electric skillet for a couple minutes on each side till they got browned spots. They came out read good and disappeared in a day.

Lentil Soup

Sorry, nowhere near enough flavor. The problem is that using water makes it very weak. I ended up adding 4 cups of chicken stock to try to fix it after cooking it down a bit.

Easy Chicken Enchiladas

They got eaten, but took 2 days. Not what you'd think of as compared to what you would get at a resturaunt. They were pretty dry I think because there was no red sauce on top, like you would expect and the filling was just ok. I used corn and bean salsa, but I don't think that was the cause, because the family goes thru a pint of that a week with chips and whatever. Maybe it was the cream cheese being used instead of sour cream, or maybe just the lack of enchilada sauce? In hindsight, I see a lot of reviewers adding the enchilada sauce, and maybe if I had done that they would have been better accepted by the kids.

Spicy Bean Salsa

Tweaked using fresh tomatoes and peppers, added 1/2 tsp cumin, 1 tsp chili powder, 1/4 tsp salt, 1/2 tsp sugar, 1 tsp balsamic vinegar, 1/2 tsp lemon juice, 1/2 tbsp olive oil, and omitted italian dressing. Came out excellent.

I used 1/2 lb diced ham and pancetta, added a clove of minced garlic, 3/4 tsp of white pepper, 2 tbsp parsley flakes (don't have fresh), to cook with the cabbage, and then added 3 green onions sliced in the last few min. I steamed the potatoes with skins on 30 min, removed the skins and made mashed potatoes, adding 3/4 tsp salt, and then served the cabbage mixture on top of the mashed potatoes. Everyone had 2nds, so in my book, that gets 5 stars

Strawberry Cake Filling

Even after cooking 20 min it was too runny and ended up making a mess of the cake. Need to add more thickener, cook longer, or get freezing cold, I don't know. It did taste good, but the cake looked sad.

Cream of Mushroom Soup II

I didn't have cream, so used milk and sour cream. Used butter instead of margarine, and only 2 cloves of garlic, and water instead of veg broth. I gave it 4 stars because it tasted pretty good, better than canned, but I had to add 3 more tablespoons of flour to get the thicker soup I'm used to from a can. Also, I used 1/4 tsp of white pepper and 1 3/4 tsp of salt. I will make it again, but will puree the stems and some tops so I get a soup with some mushroom chunks, and I will further reduce the garlic to 1 clove as even with just too it was pretty strong.

Lentils and Rice with Fried Onions (Mujadarrah)

I used 2 large onions, 8 tbsp of oil, 1/2 cup golden raisins, 1 cup rice, 3 2/3 cups water, 3/4 tsp salt, 1/4 tsp pepper, 1/2 tsp cumin, 1 tbsp sugar, no yogurt or sour cream (didn't have any)... I cooked the onions, cumin, sugar and raisins on low for 45 min till very browned. Kids and I liked it.

Hot Italian Sausage

Pretty good. I ended up adding using garlic powder instead of garlic salt, and adding more red pepper and salt. I reduced the Anise and Fennel by 1/3. Everyone liked it for eating as sausage patties this way. Will try it on Pizza next week.

Jenny's Black Forest Cake

Made this and it came out real good. I never made a multi layer cake before. I goofed and added the kirchwasser to the batter, but was lucky i hadn't added the coffee, so I added less coffee. I substituted applesauce for 1/2 of the oil, and lemon juice for the vinegar. I had special dark cocoa, so that's what I used, but I ended up adding 1/4 cup more sugar to the batter to get it tasting sweet enough. I think I cooked it for 45 min or so before it wasn't too wet inside. I made a lower fat cream cheese icing, putting kirchwasser in it instead of vanilla, and it came out good, but I got bits of cake in it when I tried to spread it, and also had trouble with cherry from the filling getting into it on the sides where the layers join. I added some whipped cream on top of the cherries on top, but don't do that if you aren't going to eat it quick because the whipped cream lost its fluffiness pretty quick. I added mini chocolate chips on top so you don't notice the bits of cake in the icing. Maybe I shouldn't have trimmed the top layer? For a 1st try at making a cake it wasn't perfect, but tastes great.

Good Old Fashioned Pancakes

good recipe, fluffy and delicious, but a little too salty and needed to be a bit sweeter. had to add more milk to get batter to correct thickness use: 3/4 tsp salt 1 1/2 to 1 3/4 cups milk 1/8 cup sugar
