Banana Cake VI

This cake is Excellent EXACTLY as directed!!! I have made it multiple times and everyone is wowed by it EVERY time! I like walnuts, so I do like to stir a cup of walnuts into the cake batter...and I sprinkle walnuts on top of the icing. This is a great recipe for using those ripe bananas you through in the freezer!

Carrot Cake

Excellent, moist delicious cake. I added extra walnuts on top of the cake. Next time, I am going to cut the oil in half and use unsweetened applesauce to make it a bit healthiear. I made mine in a 13x9 pan and it was perfect!

Chocolate Macaroons I

If these are "best served cold" then they must be HEAVENLY...because mine just came out of the oven and I CAN'T STOP EATING them! No need to change a thing, these are delicious!!! I used the foil on my cookie sheet as suggested, buttered it and cleanup was a cinch! These taste like a cross between a no bake oatmeal cookie and a macaroon...light and chewy and chocolately with a lot of texture.

Green Grape Salad

I have made this several times, and it is SO DELICIOUS!!! I wanted to tell you DONT be afraid to substitute ingredients. I was craving this treat but had only half a block (4oz) of cream cheese, and light sourcream. I used these, PLUS 4oz of Brummel and Brown Strawberry spread. This is delicious, and a tiny bit healthier using the light sour cream. You can't even tell the difference! Walnuts taste great instead of pecans as well!

Grandmother's Pork Chop Dinner

Overall this is a good recipe. My only hesitation was cooking the raw porkchops with my veggies for only 30 minutes. I ended up pulling the porkchops out and browning them in some garlic infused grapeseed oil, then putting them back in the pan with my veggies. The flavors were truly delicious, and the pork chops were very tender. I did substitute a sweet potato for one of my regular potatoes, and I added sliced portabellas. Will make this one again.

Iowa City Oatmeal Cookies

I really like this recipe. However, the batter is very dry and wants to crumble...which leads to a crumbly cookie. I took the advice of another reader and added a little milk to make the batter hold together. These cookies LOOK best if you roll a golf ball size cookie, then flatten to about half the height of the ball. That makes larger cookies, and needs an extra minute to cook.

Sausage Stuffing

Good recipe. The only thing I think missing from the actual recipe is some liquid. I had to add chicken stock to this before baking. Other than that, great!!

Steak Pie

This is a really hearty meal, and could easily be adapted to a "pot pie" style meal by adding some cooked veggies suchas carrots and potatoes or peas. I came home from work planning to make beef stew, but due to traffic didn't want to wait 90 minutes for it to cook and tried this recipe. So glad I did!!!

Beef Tips

I am rating this 5 stars due to how EASY this recipe is to adapt to the ingredients you have on hand. I Made the following changes: I left out the soy sauce altogethere. I added about 1/4 cup barbecue sauce instead. I followed the recipe otherwise, except I only simmed the beef for 45 minutes, then added the gravy mix (already mixed with water) and boiled for 1 minute. My husband LOVED this recipe.

Chocolate Fudge Buttercream Frosting

Very Disappointing recipe. I expected this to be an above average frosting with the added expense of hot fudge topping. However, I thought it had a "waxy" taste. I will never make frosting again that calls for "shortening" in the recipe. My husband thought it was fine, but if you love true BUTTERCREAM, you will be disappointed using the shortening.

Chocolate Rocky Road Cookies

This is a great recipe!! I changed 2 things: 1) I used 1/2 cup brown sugar and 1/2 cup white sugar in place of all white and 2) I stirred the marshmallows into the batter. I spread mine in a BAR pan and baked for about 15 minutes. The marshmallows "toasted" just like roasting them on a campfire. :)

Buttermilk Pie III

This is a wonderful buttermilk pie recipe, almost identical to the one my family has baked for years. The only difference is the recipe (which I can't find!!!) that my family uses, cooks about 90 minutes, but for the last 30 or so minutes the temperature is reduced (maybe even turned off). I'm happy with this recipe though. Thanks for sharing.

Sweet and Spicy Sweet Potatoes

Great recipe. Next time I will just drizzle about half as much olive oil in my pan, toss the cubed sweet potatoes right in the pan, then sprinkle with already mixed together dry ingredients. My husband loved these.

Wanda's Chicken Noodle Bake

This is a great basic recipe. You can substitute the veggies you like or what you have on hand. I went for a little healthier version with whole grain penne, and lowfat cheddar cheese. I also used fat free organic milk and this was delicious! I also added a dash of cayenne pepper to give it a kick. Will definitely make again.

Ed Zieba's Famous Family Pork Chops

This is an excellent recipe for moist, tender pork chops! If your chops are a little dry, trying reducing the cooking time at 300 degrees to 15 minutes instead of 30. However, I cooked exactly as directed and these were perfect! I added a little barbecue sauce on top of my onions, and it added just a tint of barbecue flavor. :)

Hot Pink Lemonade

This is delicious! I had some homemade blueberry syrup (made of blueberries, sugar, corn syrup and lemon juice) so I just cut the amount of sugar in half, and reduced the lemon juice....and threw in my syrup. It was a beautiful hot pink and was delicious. There is no need to strain the berries before serving as long as your pitcher has a strain option. The blueberries sink to the bottom.

Blueberry Cream Muffins

Good muffins overall. However, I was expecting a different layer of texture because of the cream cheese mixture, but the cream cheese mixture was absorbed into the rest of the batter and simply made for a moist muffin.
