Chef John's Easy Apple Pie

If you follow the recipe without adding anything, this is hands down a 5 star recipe. I don't like nutmeg or apple pie spice - I'm strictly all about brown sugar and cinnamon when it comes to baking with apples. I know, I'm probably not normal but I like keeping things simple. BTW - this is no means a simple tasting pie! It's delish, no need to add lemon or orange essence (really, who does that to apple pie?) nutmeg or flour. And how simple was it to make by making a syrup and pouring on the pie? Can't get easier than that. The only thing that was hard was peeling the apples and slicing them. Even the hubs liked it considering he's not a an apple pie lover. Don't change a thing, kudos to Chef John!

Slow Cooker Texas Pulled Pork

Had to use my bottled rootbeer BBQ sauce and with this recipe, it was delish! Only had a pork loin a little under 2 lbs and I didn't have any garlic - so I had to use garlic powder instead. This is a great recipe.

Grandma's Corn Chowder

This is the chowder that my mom used to make for us growing up... I followed the recipe almost to a tee - just used 2 cans of cream of corn, 1 can of low fat evaporated milk (I don't have any half and half around) 2 cups of low sodium chicken broth and used some slap yo mama cajun spice. It was delish with my knockoff red lobster cheddar biscuits.

Blueberry Cream Muffins

Most excellent recipe. Only subsitution was I used butter instead of oil, half white and and half dark brown sugar. Oh yeah - added the cinnamon too! Very moist! Other than that, yummos!

Golden Cheese Yeast Bread

Halved this recipe...Best jalapeno and cheese recipe ever... Felt like I bought this bread from a bakery but better! I made the dough in the breadmachine with 2 cups of AP and 1 C of white wheat flour, oh and about 3 tsp of wheat gluten with vitamin c. Added cut cubes of jack and cheddar and some pickled jalapenos and mixed it by hand.. Later I let it rise for 45 minutes by my fireplace and baked 2 small loaves at 375 for 20 minutes. Awesome recipe!

Chicken Wild Rice Soup II

Made this soup in the crock pot... So I used roteisserie chicken from Coscto, about 1 cup of shredded chicken.. Since I knew I was going to make it in the crockpot, I didn't use all milk.. I did use half cup of skim milk, and the rest with a combo of chicken broth and water. I did presoak my wild rice overnight too and cooked it on low. I came home (after 7 hours later) and it was pretty mushy. I did have to add some water to thicken and add some garlic powder, cajun seasonings (slap yo mama is the best) and some pepper. My soup was pretty much orange? Maybe from the carrots I cut up? Other than that, my husband loved it. I liked it but I did have to add water.. Ate it with Jo's Rosemary Bread on this website, most delish!

Amazing Whole Wheat Pizza Crust

Great recipe.. Cooked my pizza at 400 for 20 minutes, crust was chewy but also crispy - though it wasn't burnt. This is my go-to recipe for pizza dough

Super Easy Rosemary Bread Machine Bread

Flavorful bread. I've never baked my bread in the bread machine with the instructions given by this recipe and thought i would give it a try. The crust was crunchy and the inside was quite tender. This recipe says it makes a 1.5 lb loaf but I think it's more like a pound.

Slow Cooker Creamy Potato Soup

This is a great tasty recipe. I only had 3 slices of bacon, lol. I never have half and half in my home but I did have alot of skim milk thats due to expire tomorrow. So I used that instead of the half and half and did the low fat evaporated milk. Also used low sodium chicken broth and added a wee bit more salt. Since I made this late in the afternoon, I had this on high for 4 hours, then 30 for the last 30 minutes. Top this with a little cheddar and green onions, soooo good!

Aunt Jewel's Chicken Dressing Casserole

Good recipe... Would be 5 stars but had to improvise on the ingredients that I had in my pantry and followed the added tips from fellow viewers below. I only had cream of chicken, cheddar cheese soup, boxed instant stuffing in the red box (forgot the name of the box and threw it away!) used skim milk, and leftover turkey from turkey day that I defrosted. Also used a combo of beef and chicken broth... Did saute celery, onions with a clove of garlic and added it with the broth which was then added to the stuffing. Did bake it with the without the lid so the stuffing wouldn't be soggy. Served with this rosemary bread rolls from the pioneer woman website, oretty yummos!

Butterscotch Bread Pudding

One of the best and easiest bread pudding recipe ever. I was looking for a bread pudding recipe where I didn't have put it in a bath. I used up french rolls, used skim milk, unsalted butter (all I had left), added a little salt and just 1 cup of brown sugar. The butterscotch chips makes it sweet so you don't need the additional cup of brown sugar and you don't need syrup or a sweet sauce for it. Also baked it for 45 minutes instead of an hour because I like my bread pudding custardy. Try this recipe, you will surely not be disappointed!!

Zucchini Brownies

I was shy of 1 1/2 C sugar so it was more like 1 and 1/4 and also shy of another tsp of vanilla... The "brownie" was very moist but it wasn't dense as a brownie.. It was delish! The frosting - well, I ran out of vanilla so I added a melted square of bakers semi sweet chocolate to the frosting recipe, also used butter instead of margarine, and the frosting turned out great! Caloric value for these says 210 for a serving but I don't buy it!!! Try it! It's good!

Just halved this recipe to fit in a 9x9 pan, can we say yummos? Didn't alter the recipe. I think could get away with just 3/4 conf sugar... Nonetheless, this is easy and delish.

Black Bean Brownies

If you are on a diet, this recipe will sorta satisfy your chocolate craving! I did do 1/4 c brown sugar and the rest white. Skipped the coffee part, since I didn't have any. It came out good. Since I knew it had black beans, I (just me, i'm weird like that) could taste the "black beaniness" but it just tasted like a very dense brownie. My husband thought it was okay but said it needed frosting on it. The only mistake that I did was incorporate the chocolate chips in the batter and didn't add it last. The chocolate chips sank to the bottom. It was okay though, just had to scrape it. I'll make this again!

Baking Powder Biscuits

Excellent recipe! The only change that I did was 1 Tbl of sugar, skim milk, and subbed the butter for shortening (sorry, heard that shortening is 2 molecules away from plastic, eew) and everything remained the same. Oh, I did brush some skim milk on them between baking... Fluffy, light and delish. Easy recipe! I think the only change I would do the next time is maybe not add any sugar.

Cornbread Muffins I

Best cornbread recipe! I needed a recipe that didn't have buttermilk. The only changes I added to this was that I used 1/3 C Honey instead of 1/4 and baked it in a 9x9 pan for 20-25 minutes. Most, sweet and delish.

Banana Bread V

Great recipe. Did use the 1/2 C dark brown sugar, 1/2 C white sugar and used 3 pretty large sized bananas and added cinnamon and vanilla. I just eyeballed the cinnamon and vanilla. I used egg beaters, lower fat butter and skim milk. I baked it in a bundt pan for 45 minutes. Very moist banana bread. I could have cooked it for maybe 5 more minutes because the inside was a little undercooked but nonetheless it was very moist and delicious. This recipe is a keeper.

Pumpkin Sheet Cake

This cake is excellent! It took me 45 minutes to bake. I just made my own cream cheese frosting - 1 stick butter, 1 block of cream cheese, a capful of vanilla extract and confectioners sugar as needed. I probably used about a cup since I like my cream cheese frosting, cream cheesy tasting.. Yumm-o's! Moist cake hands down!
