Seared Sea Scallops

Pretty tasty. I omited the lemon pepper and added some much needed garlic. Scallop cooking tip (from my chef friend) - Since most of us overcook the first side, cut the cooking time on the other side in half. This will give you moist, delicious scallops every time!

Radish Top Soup

A very nice, healthy base. I added fresh herbs, spices, turnip greens and sliced radishes to the soup. I'll definitely use this many more times and play around with different combinations. Yum.

Delicious, easy and adaptable. Be aware that the recipe will heat up over night and the quanitities in this recipe make a lot of servings. My 8 guests loved it so much that I sent some home with all of them.

Garlic and Thai Basil Spaghetti

This didn't work for us. We thought the taste was too bland, probably because I didn't use enough basil. The recipe needs to be more specific about how much (i.e. packed, rough weight). I might try this sauce again with rice noodles (more basil, sans provolone and butter). But I would highly recommend a regular pesto if you're making a traditional pasta.

Brussels Sprouts with Green Peppers

Tasty surprise. Garlic, a few mixed spices and freshly grated romano cheese made this a nice side dish. I'll use it again and play with it. I think sweet potatoes or turnip could be tasty.

Cranberry Sauce

Delicious. I juiced an orange and substituted 1/2 with water. I also included cinnamon (watch your proportions) and slow cooked for 40 minutes to evaporate liquid. Used pure maple syrup, too. YUM!

Cheesy Baked Cauliflower

Amazing! Definitely cut the cauliflower steam time and increase the cheese. I replaced butter with olive oil and cut down on the mustard. I also added garlic and shallots. Despite our Thanksgiving feast there was virtually no cauliflower left. Thanks!

Baked Sweet Potato Sticks

Not bad. The taste was a little incomplete and I wasn't fond of the texture. They were less crispy than I anticipated. But I will keep this recipe as a starting point for next time I make sweet potatoes.

Low Carb Cauliflower Leek Soup

This soup is outstanding! I would recommend the broth sit a little above the vegetable mix - 6 cups should be enough. I was generous with the leek and garlic, and also substituted some of the (vegetarian) broth for water to reduce the sodium. Fantastic!

Cilantro and Garlic Potatoes

I had a little trouble getting the potatoes to cook evenly (I don't have a deep fryer). Next time I'll add the cilantro nearer to the end to properly capture its flavour. Otherwise, yummy.

Homemade Tomato Sauce I

I used this recipe to make my first batch of tomato sauce ever. It was a good base, but some of the comments were helpful for making adjustments. I suggest increasing the proportion of spices, omitting the fake, canned tomato paste, and simmering to thicken. I am really pleased with how it turned out!
