Grilled Tilapia with Mango Salsa

I loved this! The tilapia was perfectly seasoned, and the salsa (I made with a mix of mangoes and strawberries) was a perfect blend of flavors. I did find the red onion to be a bit overpowering, would probably half it next time.

Salsa Chicken

I was skeptical at first...but this was great! I varied it based on what I had in the kitchen...fajita sauce vs. taco seasoning, and left out the cheese and sour cream, and it was still delish! Note: Make sure you get a higher quality salsa, the flavor is important

White Chili with Ground Turkey

Yum! I didn't have green chiles so I used about half a can of diced jalapenos...worked great! I followed other advice and only added about three cups of broth. Also added some spinach at the end for some greenery. The flavors meld together very well, creating a complex delight!

Garbanzo Stir-Fry

Yum! Used dried basil and oregano, still came out wonderful. Added cayenne pepper and a splash of lemon juice at the end. Veggies were a little overcooked-next time I might reduce cooking time a bit. Overall, great recipe!

Chicken with Asparagus and Roasted Red Peppers

So good and easy! Doubled recipe and put in one jar roasted red peppers and one chopped yellow pepper, tasted wonderful and yellow pepper provided variety in appearance. Boyfriend raved about flavor as well.

Curried Red Snapper

This was good. I took another reader's suggestion and upped butter and milk, adding a little cornstarch for a thicker sauce. Took longer than recipe suggested and fish came out an odd texture-next time I might try putting in at 400 degrees for a shorter cooking time.

Spanish Moroccan Fish

YUM!!! I only used 3 pounds of tilapia with the veggie and spices remaining the same and it was good and made a HUGE portion. Also, I changed the cooking method because I wanted to put it in the oven and leave it alone: I put the vegetable/spices/chickpeas mixture in a 9 x 13 baking dish, rubbed both sides of the fillets with the mixture, placed them on top of the vegetables, poured about a cup of chicken broth instead of the bouillon/water mix and baked for 25 min or so at 375 degrees (temp suggested by another user as well). Served with rice and crusty bread.

Maple Salmon

Best salmon ever! One of my favorites on entire website. I ate the whole portion myself in two meals because it was sooooooo good. Wrapped in aluminum foil to marinate, but cooked uncovered. Used garlic powder in lieu of garlic salt.

Yum, yum, yum! Doubled the veggies and put in a 9 x 13 pan. Also sauteed onion and garlic with the eggplant. My boyfriend requests this dish specifically at least once every couple of weeks!
