Greek-alicious Pasta Salad

Very good. I made with "Absolutely Fabulous Greek/House Dressing" from this site, and declined to add mayonnaise because it was good enough without the extra calories. Also added olives and fresh basil.

Sweet Russian Cabbage Soup

Not only is this soup delicious, but it's even more healthy than it seems! This recipe actually makes SIX two-cup servings that by my calculations clock in at 253 calories each--the only changes I made being the reduction in sugar by half and using 97% ground beef (didn't even drain it)!

Three Sisters Soup

I tossed all the vegetable ingredients for this in the slow cooker, put it on the low setting for about six hours, stirred in the butter and flour, and had a beautiful, healthy, delicious soup in the end. For seasoning, I used a dash of cinnamon and clove to bring out the flavor of the squash and then a whole lot of black pepper and red pepper flakes to make it spicy! I would have given this recipe five stars if I hadn't had to improvise so much with the spices.

Homemade Black Bean Veggie Burgers

As a single gal in the city, I'm always looking for cheap and healthy eats I can pack for lunch, and this was perfect! I used Ritz for breadcrumbs and red pepper instead of green. I went a little crazy looking for the "perfect" condiment and even bought a revolting bottle of key lime mustard... before realizing that these are just delicious with ketchup! I think the entire recipe, which I doubled, only cost me four dollars!!

Drop Biscuits and Gravy

Yes, the biscuits are a bit boring, but so easy, cheap, and a perfect counterbalance to the gravy! I used chicken sausage and skim milk to cut down on calories, but it was still remarkably decadent. Some cayenne and a pinch of nutmeg for my personal twist and voila--a rich meal for mere pennies.
