I made this according to the recipe except I used only 1/2 of a small white onion (what I had on hand). The salad was okay, but I will only make it again with changes. As many other reviewers mentioned, there is a lot of dressing. Even if you are making it for the first time I would definitely half the amount of dressing. Further, I will probably try substituting the dressing altogether--it was too vinegary for me. I really love the dressing on the "Black Bean and Couscous Salad" from this site, so I may try using that dressing instead. Also, I will continue to use only 1/2 an onion (more kid-friendly that way), and I would increase the cilantro b/c we love cilantro. Last, as other reviewers stated, it is tastier the second and third day after the flavors have had time to meld.
