This recipe was easy to follow.As lemony is not my flavour I went for a little spicy. I added chopped 1 large scotch Bonnet peppers and 5 cloves garlic > I rubbed this over the chicken and stuffed a little under the skin before adding powdered seasonings> I also stuffed the cavity of the chicken wth a small amt (1 tbl spoon) in the chicken wth 3 sprigs of thyme.Its important to brush off any of the chopped pepper and garlic that may adhere to teh chicken as this will burn.
