Best Big, Fat, Chewy Chocolate Chip Cookie

1st batch is out and 2nd batch is in the oven! The smell is just delicious and I had one straight out from the oven and it was crispy at the edge and soft and slightly chewy in the middle. It is great. However, next time, I may reduce the amount of sugar somewhat as it's a bit too sweet. Also, if you are using brown sugar, best to use the more fine type as I used the granular type and it came out the sugar hasn't completely dissolved. All in all, it's a keeper.

Flourless Chocolate Cake I

It's heaven for chocolate lovers! I made it twice for two parties and they were cleaned up quickly! It's not easy to un mould it though even though I greased, floured and also laid some baking sheet at the bottom and on the side. I put lots of fresh raspberries on top and served it with fresh whipped cream and raspberry coulis. Wonderful!

Green Tea Layer Cake

I just made this cake with a high hope...however, the cake didn't turn out that great. It's very moist but there is hardly any green tea taste to it. I in fact used 5 tspn but still can't taste any green tea. It could be that I used brown sugar which may have overpower the taste of green tea. Won't make this one again.

Lemon Rosemary Salmon

Simple and easy! I also added sliced garlic on top of the salmon, a splash of white wine and salt and pepper. Came out perfect. My husband who is not usually keen on fish also liked it! Served it with stir-fry broccoli and sweet potato chips.

Creamy Au Gratin Potatoes

It's really good! My 1st time to make potato au gratin and it was enjoyed with complete silence and nodding heads! I also made some changes with mine, i.e. cook the chopped onions in the butter cheese sauce instead of placing sliced ones with potato, made extra half portion of the suggested recipe so that I had enough to have a layer of sauce on top of each layer of potato, added some garlic and onion powder into the sauce, used cheddar and gruyere cheese mix and finally sprinkle extra cheese on top to make it brown and crispy. I baked it for 1.5 hours and then extra 30 mins in the end under grill to brown the top. Everyone couldn't believe how tasty it was and we had it with a bbq!

Banana Crumb Muffins

Just had the freshly baked muffin. It's more like banana bread than muffin - quite heavy! As suggested by others, I added 1 tsp vanilla essence, 1/2 tsp nutmeg and by mistaken added 1 tbsp instead of 1 tsp cinnamon - luckily it turned out fine! I used olive oil instead of butter, and added chopped walnuts and choc chips. I made the topping too but I didn't like the taste of it and it all fell off so easily so I removed it all before serving them to anyone! I think I will use this recipe for banana bread in future.

Shrimp Scampi Bake

Super easy and delicious recipe! My husband suddenly said he was coming home for dinner so I had to go thru my freezer to see what I had! Found some shrimps so decided to try out this recipe. Like others, I also added some white wine in. Instead of butter, I used olive oil. I didn't cook the marinate beforehand, instead, I just mixed it all together and pour it into the shrimps. I used frozen shrimps obviously and added some chili powder, topped it up with gluten free bread crumb. Half of the dish was sprinkled with cheese (for my husband) and mine half was as it was. It was great! The juice tasted fantastic and no wonder everyone said it's great for a pasta dish! Will make it again with pasta. It really took no time and no effort at all. Thanks for the great recipe!

Juicy Roasted Chicken

My 1st roast chicken and it was fantastic!! I am not a chicken fan but loved the taste of it - so juicy! I added sweet potato, carrots, onions and garlic cloves as the veggie and also stuffed the chicken with rosemary and garlic cloves. I also put in chicken stock and some white wine in the baking tray and reduced it after baking for gravy. It's delicious! My husband loves his roast dinner and he was amazed how moist the chicken was! Will surely make it again. Thanks for the recipe.

My Favorite Pork Turkey Meatloaf

My 1st time making meatloaf so didn't know what to expect. Couldn't find turkey so used lamb instead. I halved everything as there are only 2 of us but used the full portion for the sauce on top as suggested by others. It turned out good but still lacked a kick in it. I think I will add some herb and a bit more seasoning in it next time. Will try it again.

Flourless Chocolate Cake II

It's very easy to make but not so easy to get them out, even though I greased and dusted with cocoa powder as suggested by some members. I also doubled the portion, added 2 and a half tablespoon of freshly brewed espresso and baked in big muffin tins (yielded 11) for about 25 mins. The small cakes collapsed quite a bit once cooled down but taste great good. Will certainly make it again.
