Refried Beans Without the Refry

YUM! We ate the beans whole with some Mexican Rice I found here. Made lots, can freeze, or use in several ways. Think huevos rancheros for breakfast, burritos once you've mashed them, or just beans and rice. Very good. Thanks.

Mexican Rice

This is great! Thanks. I used olive oil and a mixture of colored peppers that I had on hand, and it was very colorful. Cooked it in my pressure cooker. That way, it was super fast too.

Cheesy Picante Quesadillas

These turn out wonderfully. I love that these aren't fried, but they have a great feel and texture. I put cooked red quinoa, a bit of salsa, and some cheddar cheese in ours, and we gobbled them up. Sealing the edges with water is a great idea. Yum!

Tomato-Curry Lentil Stew

We really enjoyed this. I doubled the amounts and put it over brown rice. I didn't have celery so I chopped a carrot and put it in. I also did more onion and curry, to our taste, along with a can of diced tomatoes. We'll make this regularly.

Mexican Whole Wheat Flour Tortillas

We made these VEGAN by using coconut oil and they turned out great. We did a 1/2 recipe and when we rolled the dough into balls, they separated a bit, so we just wet our hands and it worked well. They cooked best with a bit of olive oil rubbed on the pan with a paper towel (if not cast iron). They made nice chips under the broiler for a bit. We'll use this a lot! Thanks!

Broccoli Cashew Salad

I used 1/4 c sugar and added the cashews last. I also subbed craisins for raisins. I like that there wasn't a lot of dressing. Plenty sweet. Nice flavor.

Spicy Pizza Soup

I used this as a guide and made it into a casserole. Sauteed up the veggies and sauces (what I had on hand, to desired whatever) and cooked noodles separately and then mixed them together, put into a casserole dish, added cheese on top, cooked for a bit, added olives and more cheese, cooked a bi more, and it was good.

Easy Vegetarian Stroganoff

Maybe 4 stars... It was a good inspiration for the recipe I made of it. I used a whole onion, a bunch of fresh sliced mushrooms, sauteed them in olive oil (and a bit of butter later), and then added 2 cans of cream of mushroom, some garlic, seasoning salt, salt, pepper, and a bit of chicken flavoring for some zip. I added water to the consistency that I wanted, which was less than half of what was recommended. No oats. Not vegetarian, but a good stroganof minus the chunks of meat. :) Great over pasta.

Seafood Pasta Salad

Love this! Hubby's particular fave. I add lots of different raw veggies--peas, peppers, broccoli...whatever! I leave out the seafood and it's all veggie. Pastas can vary too.

Real Potato Leek Soup

Very good--Elliot loved it. Changes: After cooking, blend the contents for a bit in blender or a nice texture. Elliot would then like to try adding tender carrots and peas along with some clams after the blending. Even better the next day.
