Cuban Smoked Sausage with Chickpeas

Very, very good recipe! I read the comments about it being too spicy, but that's a matter of taste. My husband likes spicy food, this will be one of his favorite dishes. I prefer less spicy, but I didn't find the flavor overwhelming. I made a couple changes... I substituted a can of black beans for half of the garbanzo. I also rinsed and drained the beans and used 15 ounces of tomato sauce instead. I like juices! I had no adobo seasoning so I substituted 1 tablespoon of Franks hot sauce, and bumped the garlic powder to 1 teaspoon. I do think cooking time needs to be at least 1 hour to blend the flavors. Serve this over hot cooked rice and it is amazing. Thank you for the recipe!

Crispy Pork Cutlets

I've already left my review of how amazing this recipe is, I just remembered an important note. The recipe calls for the pork to be covered with plastic when refrigerated, but the video tells you to refrigerate uncovered. I refrigerated "uncovered" as Chef John says in the video. This only makes sense, to help dry and seal the Panko and coatings. Thank you again Chef John!

Ribs Fantastic

These ribs really are FANTASTIC! The sauce was incredibly flavorful. I love simple, yet scrumptious recipes like this. If you try this recipe, DO NOT change any of the ingredients, try it just as is first. I did change the temperature to 350 and reduced the time to 2 1/2 hours since we had to leave. I refrigerated overnight, skimmed the fat off and reheated.
