Reuben Casserole

Did not have sliced deli meat. So we used a can of corn beef instead. I turned out yummy. I enjoyed how the rye bread was able to crisp in the bottom. I was sure it would get soggy, but it didn't. I also forgot to cover the casserole in foil while it cooked. It still turned out great.

Creamy Rice Pudding

We had some leftover rice from our chinese dinner. Instead of throwing out, I used it to make this rice pudding. It turned out great. I opted not to add the last milk, and it was extremely creamy. Yummy.

Grandma's Green Bean Casserole

I have made this recipe twice now. It is excellent and a great change from the "traditional" green bean casserole. I do like fried onions, so I add just a smidge to the topping. But that is just my personal taste.

Turkey Shepherd's Pie

My husband and I enjoyed this recipe, kids not so much. What a wonderful way to use up all those holiday leftovers. I served it with a side of cranberry sauce. Will be making again.

New Orleans Chocolate Bourbon Pecan Pie

Yummy pie. The bourbon definitely adds a "buttery" taste to the pie, which I found delightful. I did not enjoy the chocolate in this pie, just my personal taste I guess. I found that it took away from the bourbon flavor. I will definitely add bourbon to my pecan pies from here on, just not chocolate.

Onion Rings

This is now my 2nd time to make these onion rings. The 1st time, I used a pan on the stove to fry them. The onions needed more batter since it would slowly slide of the onion while cooking on the stove. They tasted great, but looked messy. This last time, I used a fry-daddy. Wow, what a difference. Less batter was needed to coat the onions when using the fry-daddy, and they turned out wonderful. Not only do the look good, but they taste just as good. Check out my photo, its the one with the burger and ketchup.

Basic Flaky Pie Crust

Cheesy Sausage Zucchini Casserole

Yummy. Younger kid enjoyed it, while the picky one didn't. But mom did, and that is all that matters. I was out of tomatoes, so I used a small can of tomato sauce. Using the sauce, I did not have to worry about cooking down the liquid before baking. Easy and yummy.

Oatmeal Peanut Butter Cookies III

Wow. What a great cookie. I just made the cookie part of this recipe and they are unbelievable. Not greasy, like I read in another review. Perfect. I used natural peanut butter. The cookie turned out more peanut buttery than sweet. The perfect peanut butter cookie!

Fried Spinach

"Can we have this every night?" are the exact words my four year old sputtered in between the bites of spinach. I used fresh spinach, and it turned out yummy. Now, if I can only get my 1 year old to cooperate with Spinach.
