These were great! I made some changes based on suggestions: added italian bread crumbs instead of plain, a little bit of flour to cornmeal mixture, as well as cajun and adobo seasoning and less coarse ground salt (to balance). I also let them stand in the crumb mixture while cooking the others which covered them with extra breading(extra crispy) Served them with a mayonaise, dill weed, lime juice dip inspired by a friend's visit to a southern food restaurant. They were delicious! Note: look for these tomatoes in farmers markets... didnt see them anywhere else.
