Turkey Bow Tie Skillet

Although I made a few modifications, this dish tasted much better than it looked. I cooked the pasta in a can and a half of chicken broth, used petite diced tomatoes in place of stewed, and played around with the chili powder. The fresh parsley on top really made the dish for me. Mine came out very watery/brothy but tasted AMAZING. Will definitely make this again!

Indian Chicken Curry II

YES! YES YES YES! I made this a few days ago so I don't remember my exact modifications.. I do know that I added much more curry powder than called for (love the taste). Next time will add pineapple tidbits. DELICIOUS!!

Apple Pie I

Eyeballed a little orange juice, flour and pure vanilla extract. You'll want to spread a thin layer of flour on the bottom crust before filling to absorb some of the juices so its not TOO runny. FABULOUS and easy, will make again for sure!

Korean Marinade

Way too salty for my taste, I'd recommend reduced-sodium soy sauce (and I used less than listed). I marinaded chicken and used it in a stiry fry which left a gray paste-like substance all over the pan and chicken (assuming from the flour and its meant more as a grilling marinade). Might try again with low-sodium soy sauce, but it was nothing outside of a basic marinade.

Lighter Banana Muffins

Simply delicious. Loved that they weren't greasy but they retained moisture. I added 3/4 tsp cinnamon, 1/2 tsp vanilla and 1/4 c peach nectar juice (thought I had applesauce).. and some sliced almonds. They've been out of the oven for 15 minutes and 3 are already gone :] A keeper!

Best Tuna Casserole

Wow! I'm not a big tuna and onion fan so I made up for the loss with some roasted red peppers, poblano peppers, and green onions in the topping. Absolutely delicious! I also added a can's worth of milk in addition to the two cans of soup, came out PERFECT. I will definitely experiment more with this recipe!

Whole Wheat Apple Muffins

Definitely one of the better healthy muffins out there. I substituted apple sauce in place of the vegetable oil and added rolled oats, cardamon and nutmeg to spice up the lack of sugar. They're a little dry and bland but I'll use this recipe as a base to experiment otherwise. Thanks!

Low-Fat Blueberry Bran Muffins

I made these with the intention of giving them as a gift to be frozen and ended up eating three before I even took them out of the tin to cool. So good! I ended up using 3/4 cup oat bran in place of the 1 1/2 cups wheat bran because that's all my grocery store had stocked at 6am. Still came out wonderful. Please try these!

Classic Bran Muffins

I substitute the buttermilk for 6 oz nonfat plain greek yogurt, the oil for either applesauce or pumpkin and use 1/2 cup each of unbleached white and whole wheat flour. I have used this recipe SO many times and have experimented with adding chopped apples, raisins, pecans, coconut, rolled oats, fresh cranberries, blueberries. This really is a great starter recipe!

Sturdy Whipped Cream Frosting

LOVE this! I used it for Pineapple Angel Food Cake I on this site, except I substituted coconut extract for almond extract. Simply divine. Make sure you really give it a good whipping once the cream is added, otherwise it WILL liquefy on you.
