Quinoa with Veggies

Balsamic Glazed Carrots

Pretty tasty, but not outstanding. Definitely need to steam the carrots for about 5 minutes before sauteing.

Penne with Asparagus and Mushrooms

Very tasty. Cut oil to 1/3 c.; added 1/2 yellow onion, diced; subbed milk for cream and added some flour and corn starch; added splash of vodka, 1 t. oregano, and 1 t. tarragon to sauce. Wish I would have made more to have some leftovers.

Chicken Breasts With Herb Basting Sauce

WOW! I doubled the herb mixture (subbed extra thyme and some tarragon for rosemary), added about 2 c. halved mini yellow potatoes and about 1 c. halved crimini mushrooms (add shrooms about half way through baking.) The aroma was divine, the chicken was juicy and flavorful, and the mushrooms were to die for.

Spicy Couscous with Dates

This is really tasty. I only did 3 dried red peppers and it was still plenty spicy. Also added a carrot sliced thinly and a can of garbanzo beans as the veggies were simmering. My only complaint is that the couscous itself didn't have much flavor. Perhaps adding a little butter or a soft cheese would do the trick.

Spinach and Potato Frittata

Didn't have green onions so I chopped a small yellow onion and added it when taters were about half done. Added 1 shredded carrot. Surprisingly sweet flavored.

Lentil Chili II

I amped up the heat with about a teaspoon each of crushed red pepper and cayenne, plus a generous dose of fresh ground black pepper. Turned out spicy but not unbearably hot. I also added about a teaspoon of ground nutmeg. Great hearty stew! The carrots could be added earlier to soften more.

Potato Leek Soup III

Great hearty soup. Added a leek and about 4 bulbs of green garlic to the sauté. All that butter is great for sautéing, but it's pretty excessive in the finished product. I skimmed quite a bit off the top using paper towels.

Easy Tilapia with Wine and Tomatoes

Normally I love tilapia. I figured this recipe was a "can't miss" kind of thing. White wine, lots of tasty veggies (I added sauteed onions and mushrooms as suggested, and a nice mild fish to absorb all the flavor. Boy was I surprised when I took it off the grill and it tasted like...nothing. It had about as much flavor as if I had just grilled the fish with no seasoning at all.
