Congresbury Ginger Shortcake

This shortcake is fabulous. Easy, quick, and delicious. I had to add about 2-3 Tablespoons of milk to mine before it was even close to a "firm dough", but I am not known to be a precise measurer, so that is most likely my fault. Regardless, it turned out beautifully. I served with fresh sliced strawberries in sour cream/brown sugar. Heavenly!

Gypsy Soup

This soup has a wonderful warm homey-ness to it. Perfect with homemade bread on a cold day. As other reviewers state, definitely at least double the liquid. I decided to make bread after this was started, which left it simmering for about 2 extra hours. Big mistake there. It still tasted good but the sweet potatoes (the best part) had lost all flavor, and the soup lacked texture. Husband still loved it though. I felt it needed something, maybe next time will try more veggies- spinach, carrots, zucchini. Maybe something sweet too, like apples or raisins.

Prawns of Passion

Prawns of Passion indeed! An impressive first course for our first anniversary dinner and so easy! Just might be the best thing I've ever tasted. I cut the butter in half and it was great. Leftover sauce goes great on pasta the next day too.

Quick Tuna Casserole

I give this recipe 5 stars because it is so fast, so easy, and tastes great. It's also great for those trying to watch their calorie/fat intake and craving cheesy comfort food. I ended up using 2 cans of tuna and about half a bag of frozen mixed veggies. I also spiced it up with onion and garlic powder, black pepper and a dash or two of hot sauce. I feel it would have been bland without it. Transferred to casserole dish, topped with breadcrumbs and a little cheese and broiled to give a nice crunchy topping. Still took only about half an hour from start to finish. Love it!

Pumpkin Chocolate Chip Cookies III

very very good cake-like cookie. a great way to use up some of the fresh pumpkin I processed. I agree with other reviewers that they are delicious cold, right out of the refridgerator.

Garlic Chicken Fried Chicken

Very good! turned out nice and crispy, flavorful and moist. Very garlicy, but we like that! I served the chicken with mashed potatoes, country gravy and corn. My husband raved and has been asking for it again. Next time I will try oven frying, as I have a hard time making such *naughty* food.

Vegetable-Stuffed Portobello Mushrooms

I've been making stuffed portobellos for years in a similar fashion. The recipe changes every time based on what I have on hand. Last time I used about 3/4 cup leftover cooked basmati rice, sauteed summer squash, zucchini, tomato, onion, garlic, about 1/2 cup breadcrumbs, and 1/2 cup chedder cheese. I also like to add 1 beaten egg to help it all hold together. If you don't have time to marinate, drizzle the mushroom caps (stem side up) with a little balsamic (not too much, it can be overpowering) or soy sauce and bake for about 10 mins before topping with the stuffing.

Downeast Maine Pumpkin Bread

The best pumpkin bread I've ever tasted! Only thing I changed was used 1 cup brown sugar and 2 cups white, and glad I did. Made 2 loaves and a dozen muffins.

Blackened Tuna Steaks with Mango Salsa

This recipe is absolutely fantastic! Husband was very impressed as I had never attempted tuna steaks before and they came out great. They steaks came out med-rare which was perfect for us. There was just enough salsa for the two of us, so if making for more than two, I would double the salsa. Next time I will reduce the spice mixture as I threw a lot away.

Gingery Quinoa-Stuffed Acorn Squash

I only give this 4 stars because hubby wasn't crazy about it, but I thought it was fantastic. I didn't have any fresh ginger on hand so used powdered, but can't wait to try it again with the real stuff -maybe when he's out of town ;)

Jammin' Tarheel Chili

The best chili! I like to use a smokey porter, the beer adds a great flavor. I also add jalapeno (we like it hot too) and leave out the mushrooms. Always a hit!

Apple Stuffed Chicken Breast

I will definitely be making this one again. I was out of wine so just used water with some of the leftover apple chunks thrown in. It made a great sauce to drizzle over. Also: I added about a tablespoon of apple sauce to the stuffing. It was essential to getting it all to hold together.

Black Bean Lasagna

We absolutely loved this! After reading the reviews I was hesitant to try the warm guacamole, but I am so glad I didn't leave it out. I did use 1 more avocado than it called for, and still thought it could have used more. Great with a little extra hot sauce and a dollop of sour cream!

Robin's Quinoa with Mushrooms and Spinach

I loved this recipe and surprisingly, so did my boyfriend! I followed the recipe, but I did end up with a lot of extra liquid after I added the mushroom mixture, but that was no problem to cook off. I also added some chopped bell pepper with the onion in the first step, which I thought gave a nice compliment. I thought the wine flavor was perfect. I will definately be making this one again.
