Onion Ranch Burgers
Easy peasy and my guests LOVED this! Normally, I'm not a big fan of shortcutting recipes by using powder mixes and such, but I happily make an exception for this one because the flavor is so amazing. You can't even tell that mixes were involved! I've served this at 3 barbecue dinner gatherings and people always ask, "What's in this burger? The flavor is so good." When I tell them it's just water, soup mix, and dressing mix, they are shocked. It's moist, flavorful, and when you add a slice of cheese and some crisp bacon on top, it's absolutely decadent. Follow the recipe exactly for best results!

Summer Herb Pesto
Delicious! I followed the recipe exactly but also added 2 tsp grated parmesan and a squirt of fresh lemon juice. Since my family prefers their pesto on the creamier side, I added a 1/2 cup of heavy cream to the pesto while it was warming on the stove. The resulting sauce was juuuust enough for a 14.5 oz box of farfalle pasta. I also mixed in some meat from a rotisserie chicken and the dish turned out amazing! My family was SO happy!

Peppermint Cookies
This is an absolutely no-fail recipe, with delicious flavor, a festive holiday look, and dough that is easy to handle. I followed the recipe to the letter and it turned out fabulously! I got 50 small cookies out of my batch. 10 minutes in the oven was perfect for that wonderful texture of slightly crispy on the outside, chewy on the inside. Use parchment paper to avoid sticking. Be sure to gently PRESS the candy into the cookie immediately after removing from oven. Also, I advise that you crush the peppermint candy to pieces that are about the size of MINI chocolate chips. Don't over-crush like I did -- powdered candy does not convey the desired effect! They look and taste wonderful...I'm giving these cookies away as gifts for Christmas this year.
