Chocolate Zucchini Bread II

I substituted applesauce for some of the oil. I did not have any chocolate chips, but I did have some Mexican hot chocolate disks. So I ground those up and added it in addition to the cocoa power. The bread ended up being pretty good.

Iced Pumpkin Cookies

I did not have good luck with this recipe. I started off following it exactly (except adding extra spice), but I ended up with batter, not dough. I looked up a couple other pumpkin cookie recipes and ended up adding another cup of flour and another egg. The final result ended up tasting fine, and the texture is similar to pumpkin bread.

Baingan Bharta (Eggplant Curry)

I like this recipe. I've tweaked it a bit over the few times I've done it. 1) Bake the eggplant longer until really close to mush. 2) Up the amounts of tomatoes. 3) Up the amount of cumin and add garam masala in addition to curry powder. 4) Wait until done cooking to stir in the yogurt.

Baked Falafel

So this wasn't really falafel, but I really enjoyed them. I skipped browning in a frying pan and baked them longer, flipping halfway through.

Ethiopian Cabbage Dish

I really enjoyed this. Made for a tasty dinner. I did follow the recommendations and double the cumin and turmeric. I also did half olive oil and half butter just out of personal preference.

Pretty tasty. Did a few changes: 1) All butter, no shortening. 2) 3 teaspoons vanilla. 3) 3 teaspoons baking powder in place of soda and cream of tartar. 4) Baking temp at 375.

Honey Roasted Carrots

I cut up the carrots a little smaller to reduce cooking time, and added just a tiny bit of ginger. I really enjoyed them, but my husband thought they were a little bit too sweet.

Pick of the Piccata Sauce

I didn't have any cornstarch, so I used the butter and made a roux to start with. Then added the other ingredients and stirred to desired thickness. Served tossed with pasta and veges. Quite nice.

Eggplant Parmesan II

Quite yummy. I sweated the eggplant as recommended by other reviews and added onto the time on the original browning. Through sheer luck of which grocery store I used, I ended up with whole grain bread crumbs. I didn't notice too much difference from regular, and I'm sure the extra fiber doesn't hurt.
