About this Cook
I recently quit my job to be a stay at home mom. My mom is my inspiration for cooking. She was a stay at home mom, too, and we spent a lot of time in the kitchen while I was growing up. I hope my children enjoy cooking and baking as much as I do.
My favorite things to cook
I love to try new things. I am looking for healthy but quick options. My family is trying to reduce the amount of preservatives and sodium we eat and love baking fresh bread (yes, with a bread machine, but it is still fun and delicious!).

My great grandmother's coffee cake is the best ever!
My cooking triumphs
I searched high and low for a chocolate cheesecake recipe for my husband. I had never made a cheesecake before, but my first try was a total success. We now have it every year for Valentine's Day and his birthday in August.
My cooking tragedies
I have ruined so many pots, pans, utensils, etc just by trying to do too many things at once. Guess I should learn to multi task better!

Hawaiian Sweet Bread
Wonderful! Hubby like it better than store bought. I sprayed my 10 in springform pan with cooking spray and let it rise until doubled like the recipe stated. Then I baked until golden on top, about 20-25 min. Perfect! Very sticky dough and lots of air bubbles so I poured straight from bread machine pan without touching then poked with fork before last rise.

Bacon and Blue Brussels Sprouts
This was a great dish to prep ahead of time. I made the bacon, trimmed and sliced the Brussels sprouts in the morning then made the dish for dinner. Very easy and quick cooking once all the prep work is done. Even my husband loved it and he is a pickier eater than my three year old.

Irresistible Double Chocolate Muffins
Delicious chocolate muffins! I used jumbo muffin pans and cooked at 375 for 25-30 minutes. I also added a cream cheese filling (8 oz cream cheese, 1/2 cup sugar, 1 egg, 1 tsp vanilla). I will absolutely make these again!
