So creativity struck me yesterday and I came up with a lasagna recipe that my family and I really enjoyed. I'm sure someone out there may have thought of this before I did- but to me, it was new. I'd never mixed mushrooms and spinach in a traditional
lasagna before. I don't really like using the term "traditional"- it sounds so restricting. I'm all about trying something different.
Of course, there are some recipes that are perfect just the way they are; like my momma's meat loaf! I'm sure you'll agree with me on this one...some recipes are just best unmodified. If she can give me her secret, I'll post that one here eventuallllyyyy.
Anyway, I served this dish with Romain lettuce and toasted garlic bread. The garlic bread was also delicious and easy to make. I took some french bread and cut into slices. Then, melted some butter, added a couple of crushed garlic cloves, and a tsp of oregano.
Then, I brushed the slices with this butter, placed them on a cookie sheet and toasted them in the oven for a good 10 minutes.
It was GOOD! <3
