Slow Cooker Tamale Pie

My husband LOVED this..my 4 kids liked it too. I added some black beans as well...and it had a more chili consistancy. the Cornbread mixture on tope was really good... but next time I'll add some more cheese. It was NOT spicy...so..if you like spices add more...perhaps some green chilis or mexican spices. We will definetly make this again.

Egg and Sausage Casserole

We LOVED this dish! I made it while visiting family for Easter and since we had a housefull I wanted to contribute to breakfast. It was gone in a few minutes. I have already made it twice since then. When I made it for Easter, we did not have oregano on hand so that was ommitted but other than that we followed the recipe. I added crumbled bacon to half the dish (since we have some non meat eaters in the family). I took the advice of some and baked the crescent rolls for a few minutes before adding the rest of the ingrediants. I think it saved it from being too soggy. Also, 4 cups of cheese just seemed like a lot so we cut it back to 3. It was great. The second time I made it I added the oregano and I will be honest and say...I didn't like it as well. Next time I make it I will not add it...but this is easy and delish so I will definetly make it again and again.

Slow Cooker Beef and Mushrooms

This was different. I had stew meat on hand and wanted to make a stew but sorta forgot that it would take me hours to make. So, I found this recipe and tried it. It's pretty much like a beef stroganoff and that isn't really one of our favorite meal. I followed the directions pretty much exactly. I used fresh mushrooms instead of canned and I couldn't find "golden" mushroom soup so I used the regular cream of mushroom. I left out the optional red wine. I loved that it came together in the slow cooker so that I could get the rest of my chores done without thinking about dinner. The flavor was really good. IF you like beef stroganoff then you'll really like this... I would've like my mushrooms to have stayed whole...but as mushrooms do, they shrink! =) I made both white rice and mashed potatoes and have to say that the rice was far better with this dish. I mixed them and the rice absorbed some of the liquid and it really was quite good. I'm not sure I would make this again. The kids (4 of them) ate it and said it was fine but not their favorite. They finished their plates but didn't ask for seconds. Overall, pretty good...

Washabinaros Chili

I was excited to make this because of all the great reviews. I really needed to put it in the crockpot for timing reasons....and I'm wondering if the stovetop cooking would have made it better. I think it's pretty good but there are a couple of things that I will change next time. First...the beer taste is almost alittle too strong (I had it in the crockpot for 4 hours). Perhaps the stovetop would've cooked it off more. I used a dark beer...so I may not use that next time. Also, I think that the corriander gives it a sweet taste. I added the brown sugar too so I might cut back. Because we have 4 little ones, I used 2 jalapeno's (had them on hand from making salsa) and 1 Anaheim chili. It gave us a great heat that the kids liked as well. I also used the Italian sausage but used a roasted red pepper and carmalized onion one because I couldn't find the hot... I loved the idea of the wasabi! My husband LOVES this chili. He says it has great flavor. He likes the beer flavor and doesn't think it's too much. Overall, we really enjoyed this chili and I will definetly make it again. I think it was a little soupy but after it sat off the heat it came together nicely. One other thing... I used 2 cans of kidney beans and 1 of black beans. I drained the last 2 because of the liquidy of the chili. It is a little chunky...so if you like your chili like that then you'll love it. I put some aside and used my immersion blender pureed it a bit because my daughter doesn't like chunks

Cheesiest Potato Soup

This is a pretty yummy soup. I didn't have the cayenne or the dill on hand so I added garlic salt, garlic powder and a little more fresh ground black pepper. I used a medium cheddar because that is what I had on hand and also half and half instead of the heavy cream. I added a large handful of bacon crumbles for the last 5 mintues. It turned out really well and it was so QUICK and EASY to make. Delish.
