Tex-Mex Enchiladas

Loved these enchiladas! I followed the recipe exactly, the only thing i will do differently next time is saute the onions first before putting them in the tortillas. Thanks so much for this wonderful recipe!

Mexican Rice II

I followed the recipe exactly, and lifted the lid off the pan after it was supposed to be ready to fluff with a fork... and none of the liquid had absorbed, so I set the timer for 20 more minutes... then it was less liquidy, but the rice was still hard! So I set the timer for another 20 minutes and added water... still crunchy, very mad at this point, but not willing to give up, so I added more water and let cook for 30 minutes more... "most" of the rice was not crunchy after all that, but some still was, and what was edible was not good... don't waste your time!

Zucchini Brownies

Awful! Should have trusted my gut feeling on this one. I was gifted with several zucchinis from my neighbors and wanted to surprise them with something made from them... I made 2 of these EXACTLY according to directions, and had high hopes even as it was baking even though there was a sort of peculiar smell... I thought the wonderful chocolate icing would cover up any of the zucchini taste, boy was I wrong! My young kids and a neighbor kid wouldn't even eat more than 2 bites of this. The poor neighbor girl tried so hard to eat more, saying, "Well, I just am so used to the brownies my mom makes, these are just 'different'." I made myself eat some of it, and decided there was no chance I was letting my neighbor who gave me the zucchinis have this... my husband laughed at me when he came home and I told him what I made, he tried it and gagged on it. The only bright side to the waste of these ingredients is that I've found a chocolate icing that I'll make again. Trust your instinct and... DO NOT MAKE THIS!

Smoky Chicken Spread

This is the best chicken salad recipe I've ever had! I added a touch of liquid smoke, because I couldn't find smoked almonds. I used this as chicken salad on bread instead of as a cracker spread. You simply have to make this!

Vegetable and Feta Latkes

Sorry to give these a bad review, but they were tasteless and boring, and also very time consuming. My husband took one bite, and gave me the "look". My 3 and 6 year olds liked them somewhat, but only because I told them they were "homemade chicken nuggets". Out of all of us, the dog enjoyed this highly expensive dish the most...
