Eggplant Parmesan II

This is one of our favorite new meals and we have it often. I use only one eggplant and make it in an 8 X 8 casserole dish until all the cheese is melted and the breaded eggplant is browned a little more. Definitely use a sauce that you like because it makes a big difference and don't use too much of it or it overtakes the flavor of the eggplant. Yummy!!!

Apple Cinnamon Oatmeal Bread

Loved it! Took it to a brunch this morning and was already asked for the recipe. I made it with 1 C all purpose flour and 1/2 C wheat flour and then made some changes others had said: added 1/2 tsp nutmeg and 1/4 tsp cloves, used 1 1/2 packets of the oatmeal in the mix and used the last 1/2 packet to make the struesel topping which was fantastic. I also added 1 1/2 small granny smith apples diced. It was so moist and the streusel topping just made it great (although some of the topping did fall off when I took the loaf out of the pan, there was still plenty left to make it delicious). This will definitely go in my recipe box and be used often.

Orange Drop Cookies II

I used shortening not butter and added a 1/2 cup flour as some others suggested and they turned out just like the picture. They have a great orange flavor and we love them. To make the icing I had to add an extra tablespoon of orange juice.

Banana Oat Muffins

I've made these a few times now & did make a few changes, some from other reviewers. I doubled the recipe, used whole wheat flour for 1/3 of the flour used, used quick cooking oats & apple sauce instead of oil. We LOVED them! this is going in our favorite recipes.

Meatball Nirvana

This is my new go to meatball recipe. We loved them. I doubled it, used ground turkey, omitted the pepper flakes (cause I hate biting into those little hot pieces) and made them a little smaller than golf balls. I baked and froze one half of them and only half baked the second half and finished cooking them in some home made spaghetti sauce in the crock pot. They made excellent meatball subs for our family of 4 and there was still enough left over for the kids and I to mix with spaghetti noodles a few days later. I can't wait to use the other half still in the freezer.

Chewy Peanut Butter Brownies

I used a bigger pan to cook them in and cooked them for about 35 mins. I added chocolate and peanut butter chips both inside and on top of the brownies. Not too many though. The peanut butter chips on top browned a little more than I would have liked by the time the brownies were cooked but they weren't too bad. I wasn't crazy about the brownies myself but everyone who ate them raved about them and the kids loved them. I was afraid I had over cooked them a little and ruined them but after they had cooled and I cut them they were perfectly cooked and chewy. I will make them again.

Best Brownies

I made the recipe just as it is without the frosting (cause I didn't have enough powdered sugar on hand) & they are delicious. I will definitely double it for a crowd but like that it was for an 8x8 pan so there aren't as many to eat. ; p

Cream Cheese Frosting II

I cut the cream cheese & butter in half & added an extra cup of powdered sugar like some of the reviews said & it turned out too sweet for me. I still gave it 4 stars because kids loved it. Next time I'm going to follow the directions exactly.
