Microwave Lemon Curd

This is my new way to make Lemon Curd. It works beautifully and it is quick, easy and foolproof. I have halved this and it worked just as well. Why make it any other way???

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Chantal's New York Cheesecake

A perfect cheesecake. I get rave reviews when I make this. I followed other advise about not overbeating it and I always cook in a water bath. My only addition to the prep is that I add the flour after I cream the cream cheese sugar mixture. I had it lump once when I added it at the end along with vanilla extract. I have never had the crack across the top like other recipes.

Baked Oatmeal Squares

My husband and I liked this alot. We are not hot oatmeal fans but love oatmeal cookies and this seems like a healthier version. Nice change for breakfast.

Southern Pecan Pie I

I added only a half cup of sugar and this was a perfect pecan pie. Very similar to a recipe my husband's aunt gave me years ago but it only made an 8" pie. This will be my pecan pie recipe from now on.

Glazed Apple Cookies

Used 1 Honey Crisp apple and chopped it fine. It was more than a cup but it worked out great. Like others, I used butter instead of shortening. I forgot to add the 1/4 c. milk and I guess the additional apples made up for that. I added chopped dried cherries instead of raisins. I'm not a raisin lover. Delicious cookie! Used maple syrup instead of cream for the glaze and had to make additional glaze. Added a tablespoon or so of milk to thin it a bit. We loved these cookies.

Coconut Poke Cake

Chicken Suiza Cornbread Bake

The canned corn should be drained. I thought the cornbread layer was to runny. Next time I will bump up the seasonings. Maybe even another can of green chile. My husband and I liked it enough to have it again but it needs a bit more spice. I didn't add the mushrooms. I thought it just didn't fit the type of recipe it was.

Easy Chocolate Chip Pound Cake

This is a wonderful cake to be so easy. Used vanilla pudding (3.4 oz) and mini chips and glazed with Satiny Chocolate Glaze and topped with toasted walnuts. Really liked this recipe.

Black Bean and Couscous Salad

Liked this a lot. I thought the only improvement would be to add more citrus or vinegar. It needed a bit more dressing. I made this with whole wheat couscous and left out the cilantro. I will make this again!

Asian Chicken Salad

We loved this salad. I made it on a hot summer day and it could not have been better. I halved the recipe for the salad and added a couple of cups of broccoli slaw mix and some toasted slivered almonds. I used the canned rice sticks and a few oven toasted won ton wrappers that I happened to have on hand and all of the dressing recipe. It's a light tasting dressing and it needed the extra dressing.

Broccoli Cheese Soup III

My husband thought this was as good as the Broccoli Cheese soup from Panera. Comes together quickly and I usually have all the ingredients on hand. I liked that the recipe called for fresh broccoli. I will make this again.

Blueberry Streusel Muffins

This is a great recipe for blueberry muffins. The only thing I would do different is to make more muffins out of the recipe. I thought that the 12 muffins were filled too full and they sort of spread out over the muffin tin. I went ahead and followed the recipe this time but will make a few more next time.

Tortellini Bacon Broccoli Salad

This was very tasty and easy to put together. I added the entire jar of lite coleslaw dressing though. Thought it needed it. Was great for the entire week. This was one of the few pasta salads that I thought didn't get soggy after it set a day or so.

Peppermint Bark

Strawberry Sherbet

We pick tons of strawberries during the season and this is a great way to use them. I halved the recipe and use my Krups ice cream maker. I have to refreeze the cylinder after the first batch and freeze the other half of the sherbet the next day. I don't add the cinnamon but this recipe is delicious. My friends rave about the wonderful, fresh strawberry taste.

Chocolate Bar Pie II

I made this for Easter and it was a big hit with our guests. The filling reminded me of a tasty chocolate mousse. I thought it was easy to put together also. I used a purchased graham cracker crust because I was making several other desserts but next time I will make a homemade crust. It's really so much better.
