Easy Homemade Chili

Reviewed: Dec. 4, 2011
The basics are good..however I used diced tomatoes, used italian meat sauce adds deeper flavor, cumin, more chili powder and only used water to thin out...but it was still thick I added about a 1/2 cup. Simmer on low for an hour for richer more intense flavor.

Spiced Beef Pot Roast

Reviewed: Nov. 5, 2011
I have made this twice the first time as written; I found the oil to be overwhelming and it tasted greasy. The second time I chose use one tablespoon in the rub and enough oil to light coat the bottom of the pan when it was time to brown the meat. It will make a BIG difference in the outcome of the meal. I FOUND NO REASON TO USE 8 TABLESPOONS OF OIL...UNLESS YOU ARE PAN-FRYING AN ITEM. Oil will disperse the spices and will block the meat from absorbing the flavors.

Slow Smoked Pork Spareribs

Reviewed: May 8, 2011
I give this recipe three because of the changes after the changes it's a five. First I believe the amounts are way too much for the amount of ribs. I found it best to combine all the dry ingredients and place them in a shaker. This way you can control the amount based on the amount of meat. I have found that the fruit and wine are best left for dessert. I use the rub with alittle apple juice and place them in plastic wrap with absolutely no air to help the spices penetrate the meat. Let set over night in the fridge and cook as you please.

White Chocolate Macadamia Nut Cookies IV

Reviewed: Apr. 12, 2011
First, this really is not a true cookie in my opinion. It's very cakey in texture, dry and they do not spread. My husband did not mind the way they turned out but this is not what I was looking for.

Glazed Meatloaf I

Reviewed: Mar. 20, 2011
This is a very nice recipe...not my favorite but if you're looking for a nice change I suggest you try it. I did not change a thing and for the most part it was really good. I'm not a lemon fan. For the thoses for change more than one thing in a recipe then complain about it...it's not fair to rate a recipe that YOU have altered!!! If you have a recipe that you feel is better I suggest you submit it.

Baked Fish and Rice

Reviewed: Jan. 15, 2011
Four stars because I changed a few things. First, make sure you pre heat the oven (before placing the dish in the oven) as it can take up to 15 mins for some to reach full temp. Spray the bottom and sides of the dish to prevent burning. I used some garlic, salt and lemon pepper on the fish. I left out the paprika and cheddar cheese. Thanks for a great dish.

Red Potato Bites

Reviewed: Dec. 24, 2010
I first made these for a friends baby shower and they were a big hit!!!! I'm in the process of making them for our Christmas Day luncheon. Every recipe should be taken as a base to be adjusted by you... I slice the potatoes, place in salted boiling water turn the heat off after 5 mins and let potates sit in the water until tender yet firm. Drain the water w/o removing the potatoes from the pot; run cold water in the pot to speed the cooling. Drizzle with olive oil and sea salt before using a melon baller. I added lots of garlic, butter and use Sharp Cheddar. Oh my they are GREAT!!!

Flourless Peanut Butter Cookies

Reviewed: Dec. 16, 2010
I'm rating them four stars because I don't care for peanut butter. I made them for my husband and he loved them... I doubled the amount of the listed ingredients (1 cup of splend and 1 cup of brown sugar) plus 1 tsp vanilla extract, 2 Tbs of flour and 1/4 cup of nut and chocolate chips. Baked for 11 mins and let cool completely before moving. Although I don't care for peanut I must say the recipe is great!!!

Pork Tenderloin in Bourbon

Reviewed: Apr. 13, 2010
This was an amazing recipe with a couple of minor tweaks...I used liquid smoke instead of soy and used a garlic press to release more of the garlic flavor. Reduced the marinade and added a half bbq sauce which made a wonderful glaze. Being a KY girl gotta love the bourbon...lol Thanks, I'll be making this again...soon!!!

Luscious Chicken Pot Pie

Reviewed: Dec. 4, 2008
I first made the recipe to the letter and that's why I'm giving this 1 star. It was very bland...sorry. I see that others are giving this recipe 4 and 5 stars but with many changes...this does change the outcome and is not a true rating.

Pollo Bella

Reviewed: Aug. 8, 2008
After reading the recipe I made a few changes. First, I fried a couple pieces of bacon then removed them and sauted some onion in the fat....this add more flavor. Cut back on the cheese and added some nice white wine at the end. As for the pasta...try adding a tsp of dried Italian seaoning to the water when it is boiling. IT'S Great!!!
