Angela's Awesome Enchiladas

My husband and I LOVE this recipe! We live overseas and are from California and desperately miss mexican food. This is the closest to San Diego style enchiladas we've found. We make a couple small changes: we only use enough of the sour cream/soup mixture to cover the bottom of the pan (we found that if we used what was left after adding it to the chicken mixture it caused the tortillas to get soggy) and we use corn instead of flour tortillas (our preference really). It's a bit time consuming, but SO worth it! Make these! You won't be dissapointed!

Slow-Cooker Chicken Tortilla Soup

This soup is awesome! I made it exactly to the recipe and loved it! Not too spicy, but spicy enough! I usually just use store bought chips and that's fine, and I add avocado as a topping. Yum!

Snow Flake Cocoa

This is great! Made it last Christmas morning and it was perfect for a warm treat during breakfast/present opening! Instead of candy canes, I added a bit of cinnamon to the top. Perfect!

Cornish Game Hens with Garlic and Rosemary

My husband and I love this recipe! We usually add some garlic powder to the salt/pepper rub. Some of the garlic we leave in the bulbs around the hens and sprinkle a little olive oil on them...they go great with the hens and are a lovely addition to mashed potatoes! Great recipe!

World's Best Lasagna

SO much work, very time consuming, but WORTH IT! This is amazing! My husband and I travel to Italy frequently and this is still our favorite lasagna EVER! We make it exactly to the recipe, but have found that we only need 8 lasagna noodles (4 for each layer). Other than that, follow the recipe and you'll have an amazing meal. GREAT for groups as it makes a lot, and it's also amazing leftovers for days to come! Enjoy!
