Asian Lettuce Wraps

Disappointing :( I thought this dish lacked flavor.. and the amount of rice was ridiculous! I'd add more garlic, cayenne pepper and maybe even some ginger next time.

Peppermint Ice Cream

One word: AMAZING! This ice cream is so good that I've already made it twice in one month! I used my Kitchenaid ice cream mixer and followed the recipe exactly. Thank you so much for sharing.. peppermint icecream will forever be served to my family! :)

Artichoke Salsa

Great salsa recipe.. although I thought it tasted a bit more like a bruschetta to me. I omitted the olives and used fresh cilantro instead of basil. Served with tortillas (that I baked and sliced in 6 pieces). This recipe is a keeper!

Dinah's Baked Scallops

I used 6 large scallops for this recipe and halved all ingredients (for 2 people). Overall, I enjoyed the recipe but thought it was slightly on the richer side. I think I would prefer this as an appetizer. Reminded me of a Shrimp Dijon – only with scallops. I baked my scallops for about 20 minutes and they were perfect. Did not experience any sogginess as other users reported.

Eggplant Parmesan II

Mmm... this recipe is absolutely amazing! I halved the recipe and used 1 large eggplant. As many users stated, this was my first experience cooking with eggplant and I was pleasantly surprised. Tastes like a mix between lasagna and chicken parmesan. I cut my eggplant slices about 1/4" inch thick and it worked great. I allowed my slices to sweat (sea salt both sides and sit for 30 min, then wash slices and pat dry) and baked for approximately 8 minutes at 400 degrees before preparing the layers of the dish. Slightly time consuming – but very well worth it. Highly recommend for anyone – you won’t be disappointed!
