Chayote Squash Side Dish

Add 1/2 thin sliced onion and sautee until fragrant and brown with the gralic before adding the chokos. Substitute lime juice for the vinegar and you are set!

Thai Shrimp and Cabbage

I live with a Burmese man, and their cooking is very similar to Thai... he enjoyed this recipe very much! I marinated the shrimp in my favorite spices, only used half the water and soy, and garnished the dish with thin-sliced onions marinated in chile sauce, chopped peanuts, cilantro, red pepper flakes, and would have loved some bean sprouts with it. The cabbage would also have been good if sauteed with a little of the soy sauce or fish sauce and tomato paste.

I was really skeptical about this recipe, but I was very pleased with the end result. I more than doubled the spices plus added a few of my own as well as a few tsp of flour, but the end result was fabulous.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

This is a great combination of coking methods and spices, but I had to change it a little. I doubled the oil, added 1/4 of an onion (thin sliced), used two cloved garlic, 1/2 habanera, doubled the cumin, added 15 diced cherry tomatoes plus 1 tsp paste with 1/4 cup water, and omitted the cilantro (I did not want a South East Asian dish!). I reccomend sauteeing the garlic, onion, habanera, and ginger first until tender,m then adding the potatoes with all spices except garm masala. saute until potatoes are almost done, then stir in the cauliflower and tomatoes. after about 5 minutes, add the paste and water with the garam masala and smother until cooked through.

Smashed Cauliflower

Reduce the liquid by half. Boil with bay leaf and onion, then discard when you wish to smash cauliflower. Add 2 mashed potatoes to mashed cauliflower. At the end stir in about 2 Tbsp more butter than called for. Add 3 Tbsp powdered milk to broth for more flavor.
