Baked Flounder

Seasoned with Penzey Spice's "Greek Seasoning" as it was the only marjoram I had. That, topped with feta as well as the cheese mix was AMAZING. We loved it!

This was a great recipe! I would only recommend less bread crumbs (and this is coming from a bread crumb lover). Add little by little to taste. You'll most likely only use a little over a 1/4 cup.

Texas BBQ Chicken

Yum!! My husband and I used this recipe to make BBQ chicken sandwiches. Really, all you needed was some buns because the chicken and sauce were incredible! We added a bit of Sweet Baby Rays BBQ sauce in the last couple minutes of cooking as another reviewer suggested - yum oh! With the left overs we made homemade BBQ chicken pizza. We used the sauce as a sub for marinara, added some red onion and mexican mix shredded cheese and the result was delish! Highly recommend this recipe!

High Temperature Eye-of-Round Roast

Not sure if it was my oven (I'm in a new rental apt.), but the outside of the roast was pretty tough and the internal temperature only was at 120 when I tested before cutting. Make sure you know your oven well before experimenting with this recipe! I had to put the roast back in the oven for another 15 minutes at 375 degrees to reach the internal temperature of 145. I would definitely recommend testing the temperature before letting it rest to assure that it has met the right temp. I also followed some suggestions to add spices as a rub before cooking - be careful with the amount you use as it will overpower your pallet if you use too much. Use a modest amount and let it marinate for a bit - trust me... the roast will absorb the flavors. Otherwise you run the risk of only tasting the spices and not the meat. (Not a good combination when you end up with a tough exterior like I did. We ended up cutting off the edges... what a waste!) The end result was a pretty tender center, and I'm giving the recipe the benefit of the doubt, but rating our experience with spices and all, I would have given this recipe 3 stars.

Go with less cucumber and add in if necessary after tasting. The first time I made this I bought a small cucumber thinking I could use the whole thing - bad idea. We ended up throwing most of it away.

Grilled Yellow Squash

These look great in the picture, but stuck to the tinfoil I set them on so they wouldn't fall through the slits in the grill and cooked VERY quickly. Half of them burnt from the time I walked into the house to grab a set of tongs and came back out. Definitely don't slice too thin if cooking out on a bbq!
