Panzanella Salad

Yummmm! Anytime I can eat a "salad" made out of bread, I'm in! This was just divine and pretty much a big bowl full of all my favorite ingredients. I just realized that I forgot the onions, but it was still delicious. I used a mix of green onions and kalamata and that was delicious.

Zucchini Brownies

These are great! You literally can't even see or taste the zucchini. I substituted most of the oil with no-sugar-added applesauce -- this definitely created more of a cake consistency than bar/brownie. I still can't believe you can make a cake this moist and tasty with zucchini, no eggs and barely any oil - I give it 5 stars simply for that!

Butterscotch Bread

Love the uniqueness of this recipe. I did cook the butter, brown sugar and a little buttermilk together as one reviewer suggested, but I can't say it brought out the butterscotch flavor. Most of that flavor came from the addition of butterscotch chips. I added a half a bag and next time would probably add more. The buttermilk adds a really nice moistness and texture.

Whoopie Pies

The cookie part of these pies are great. Much more flavorful than others I tried and they are cakey yet delicately proportioned. The filling was also much better tasting than others I've tried but... basically a nightmare to work with. Goopy, sticky and oozy, both to mix and portion into the pies. I'm looking for a filling that is thick and fluffy enough to not ooze out the sides like this one did, yet fluffier and less sugary and stiff than a standard frosting. I have yet to find that in a recipe that doesn't use shortening. Bummer.

Quick Cherry Turnovers

I thought these were pretty good, but not as mouthwatering as I'd envisioned. The crescent rolls just didn't do it for me for the crust. For as bland as they were, they need a better-tasting glaze. They also looked really easy, but I found them to be kind of a pain to put together, with filling constantly squirting out the sides. So then you add less filling which made them even more bland... It was a conundrum.

Coconut Poke Cake

I love how easy this was! I love the Pepperidge Farm coconut cake and wanted to make one similar. This is it! I used a white french vanilla cake mix and subbed coconut milk for coconut creme, since that was all I had. For the frosting, I mixed a half a tub of "Fluffy white frosting" with a tub of whipped topping with some flaked coconut. It was still fluffy, but a little more substantial than just whipped topping. I topped it with more coconut. REALLY really good!

The Perfect Chocolate Chip Cookie

Love that these don't include the trans fats via butter/shortening like most cookie recipes. I made mine with white choco chips and thought they were really good! They baked up beautifully and I really like the texture. I added butter flavor extract instead of almond and I think next time will up the dose to 2 teaspoons of butter extract just to reinforce a more buttery taste.

Broccoli Pie

This was delish. I also sauteed fresh broccoli with onions and garlic and tossed in a little spinach as well. I seasoned it up with salt, cracked pepper and crushed red pepper. I cooked it in a 9X13, which increased the crust capacity. I also substituted some of the cheese for cottage cheese and used less cheese. Good stuff. This pie would be a great breakfast dish also as it's somewhat quiche-like.

Cheese's Baked Macaroni and Cheese

I had a little trouble getting the flour/milk/butter mixture to thicken in the time stated on the recipe, but it ended up working out. My only real beef with this recipe was the dry bread crumbs on top. I think they needed to be mixed with some kind of fat - whether cheese or butter. Plain dry bread crumbs on top resulted in a dry and sandy texture on top rather than that crunch I was looking forward to.

The name of this cake made it sound better than it actually was. It was just a regular cake with a fairly thin layer of streusel on top. I think it would've made more of an impact if the streusel was doubled and came out crunchier.

Caramel Icing

Yummmm! I used whole milk instead of cream and it worked fine. I added a little more milk and a little less powdered sugar to thin it out to what I consider 'icing' consistency. The only reason I give it 4 stars is because the powdered sugar clumped a little on me when I added it. Seems like it calls to add it at the wrong time.

Apple Squares

This is basically an apple cake. I don't know what I expected - maybe more of a bar. Has a good, rich flavor and the cinnamon sugar on top is good. I felt like they were missing something even with that, tho, so I made the caramel-icing recipe and drizzled it all over the top and that was what really hit the jackpot. I used less powered sugar in the icing (1.5 cups) to make it less thick.

Campbell's Kitchen Easy Chicken Pot Pie

This recipe was easy, and I think it's a good base recipe. But it was very bland. It reminded me of eating from a school cafeteria. First off, salt, pepper and some other spices are a necessity. The filling would be good if maybe you cubed up some Velveeta and let it incorporate to make a cheesy sauce inside. Maybe also use a cheese soup base. The crust needs something, too. It's also very bland. The crust had a nice crunch to it and overall the casserole had a good consistency. It was just missing flavor.

Whoopie Pies III

I loved the slight crispness of the chocolate cookies, but the flavor was somehow lacking. Not sure why. The filling was pretty good, but again, not terribly flavorful and not that light, creamy filling I was hoping for. Regardless, they were easy to make and had great presentation. I put each one in a baggie and brought to a potluck and all the kids snatched them up immediately.

Broccoli Cheese Soup V

Great recipe. I love that it doesn't use cream, yet is exceptionally creamy. I made this for some friends that just had a baby and the reported that they fought over the leftovers. I would suggest using fresh broccoli instead of frozen.

Spanish Rice

My sister in law is from Columbia and is always making this amaaaazing spanish rice, so I'm always looking for the right recipe. This is not it, unfortunately. It's not horrible, but is too saucy and gluey, and lacks the flavor I was hoping for.

Summer Squash Bread

This was pretty good. I also decreased the amount of nutmeg and a little less than 1tsp was plenty. I read other reviews saying that the baking time was too long. I cooked it maybe 10 extra minutes, continually checking it (checking to see if toothpick came out clean every few minutes). When it was finally done after careful monitoring, it was a good bread, but kind of dry and nothing really special. If I hadn't sprinkled walnuts and brown sugar on top before baking, I think this would've been still good, but pretty boring. Lesson learned: Squash certainly works in bread, but doesn't pack much punch.

Homemade Black Bean Veggie Burgers

Despite taking advice of others and using more egg, mine were still not firm at all. The flavor was also a little bit bland and, altho, I love cumin, the amount was just a little too much to put it over the edge and detract rather than add to the taste. It's a great recipe to start with and tweak, tho.

Blueberry Zucchini Bread

This is a delicious recipe. The only reason I didn't give this 5 stars was because I felt that the amount of cinnamon overpowered the bread a little bit. I would reduce it at least by half next time. I made two normal sized loaves and they ended up taking closer to 1 hour, 20 minutes. (!) I also did half white, half whole wheat flourr (which I highly recommend!) and substituted half of the oil with unsweetened applesauce. I also ommitted 1/4 of the sugar and probably could have left out even more - it was still plenty sweet. Always looking for ways to make recipes more healthy!
