Lou loves these, I reduced water by a cup and left everything else the same. Oh, no red coloring.

I used applesauce instead of oil and added a little oatmeal in the wheat bran. I also used 1/2 whole wheat to white flour. These are out of this world good!

Caribbean Sweet Potato Salad

Reviewed: Dec. 21, 2008
Penny P says: This was a lot of work to prepare, but the results were definitely worth it. I added a few extra cloves of crushed fresh garlic to this (about 4 total)which gave it a great kick and a wonderful aroma. I made this for a BBQ with some other side dishes, and this was the one dish that everyone finished. I got lots of compliments on this one. It's also really colorful and looks nice on the table. The different textures in the ingredients are what made this so unique and delicious. NOTE--I tripled this recipe and it came out fantastic.

Megan's Granola

Reviewed: Dec. 21, 2008
Took Ggrasley advice: "I do like cooking it on convection at 200 for about 50 min. It takes three cookie sheets and with convection and/or a low temp you don't have to fear burning the granola." Contributer note: There is a slight mistake on the recipe. My original calls for 1 Tablespoon (not teaspoon) of cinnamon and 1 Tablespoon of vanilla. Use 1/2 applesauce and 1/2 oil for healthier blend.

Caramels I

Reviewed: Dec. 13, 2008
First, I only use 1 cup corn syrup. I boil the sugar (1/2 brown sugar) and corn syrup to 350 degrees, then remove from heat and add butter (only about 1 stick, usually less) and 1 tsp. salt. Then I add the cream to the mixture, but I heat it first. Add the hot cream in a slow stream while stirring constantly, then return to the heat and boil to 250 degrees. Comes out perfect every time. Pour into greased 11 x 13 pan.
