Scottish Shortbread IV

Reviewed: Mar. 12, 2009
I made these exactly as written and they turned out beautifully. I did use 4 1/2 cups of flour. Rolled them out on a wooden cutting board, dough is a delight to handle. I made rows of fork pricks and then used pizza cutter to cut into the cookies. These are gorgeous! I got a little more than 40 cookies. This is well worth the ingredients.

Irish Soda Bread

Reviewed: Mar. 12, 2009
This is excellent. 1/2 the recipe easily fills a 9 inch small iron skillet. Second time I used fresh frozen cranberries instead of raisins and it was delicious too. I used caraway both times. Do not leave it out, it is what really makes this Irish!

These are really good. I made them as the recipe stated. Next time to make them perfect I will use one whole egg, and add 1/4 cup brown sugar to the dough. We thought they were a little dry.

The only adjustment was I almost doubled the coffee in order to get a great spreading consistency. Was great on the Gob cake from this site too.

German Rye Bread

Reviewed: Jan. 27, 2009
I made this exactly as written and it turned out really good. Next time though I am going to try proofing the yeast and making the bread in a traditional manner. I really do not think this procedure may have been worth the time commitment. We shall see though.

Herb-Crusted Chuck Roast

Reviewed: Jan. 27, 2009
I made this exactly as written. I was concerned there was no salt in the recipe and I was right it should have been added. I would also suggest using a muchbetter quality cut of beef. Mine was not tender, but fatty and gristly. The rub though has real possibilities. The sauce is similar to a horseradish sauce which is not a favorite for my family.
