Curried Coconut Chicken

This dish was ok. I've had and made better. It needed a bit more flavor. I kept it to try again and maybe add a bit more flavors to it.

Creole Black-Eyed Peas and Rice

This dish had a lot of flavor and turned out well. I used brown rice, however, and upped the cooking time. Next time, I'm going to add more water if I use brown rice, because the extra cooking time did dry it out a bit.

Vegan Split Pea Soup I

I had some dried split peas on hand, and I feared that I wouldn't be able to find a flavorful split pea soup recipe. This one convinced me that it's possible! It was great and full of flavor. I'm not a vegan, though, so I used homemade chicken stock instead of water.

Cranberry Pot Roast

This was so easy and super yummy! I will be making this again. I put some potatoes and carrots in with the meat. It made for a well-rounded meal.

Apple Pumpkin Muffins

These muffins were amazing. Everyone loved 'em. I added about a 1/2 cup of milk at the end, though, as the batter was too crumbly to be able to easily pour.
