Spicy Basil Chicken

Great flavor but omitted the extra salt and it was still plenty salty. Used jalapenos sliced the long way. Next time I will add green beans!

Honey Nut Bars

Forgot the powdered sugar on top, but it didn't matter! These were delicious! Almost like cake, super sweet with a definite honey flavor. BTW, I used whole wheat flour and they were still light and fluffy.

Super-Delicious Zuppa Toscana

YUM! I followed the recipe exactly but only had chicken sausage with spinach on hand. Would have been six stars with browned crumbled Italian sausage! Update: I have made this recipe three or four times now, and I have tried it with turkey italian sausage and with pork Italian sausage. With kale and with spinach. I have to say, my favorite is the pork Italian sausage, it browns up very nicely and adds a deeper flavor. The kale has more texture than the spinach, and the flavor is unchanged. Still and AWESOME recipe!!

Balsamic Bruschetta

This is exactly how I have made my bruschetta for years, except I like mine more soupy so I use about 2 Tbs EVOO and 3 Tbs Balsamic Vinegar. YUM!!

Zucchini Yogurt Multigrain Muffins

I prepared as written with 1/2 C sugar. Very good but too moist, will probably cut out the oil next time. Kids loved them so I am thrilled to be sneaking in carrots and zucchini!

Cake Mix Cookies V

Easy and tasty! Crunchy yet chewy yet soft. Left out the walnuts for the picky eaters, but still feel virtuous serving the oats in the yellow cake mix cookies. Made them with my medium sized scoop and flattened with the bottom of a glass. Perfect rounds!

Easy Spinach Dip

Yum! Used 1 bag chopped fresh spinach, steamed and squeezed dry. Omitted the cumin and tomatoes and used chunky medium salsa and pepper jack cheese. Delicious warm with veggies to dip!

Olive Oil Roasted Eggplant with Lemon

Yum, roasted veggies carmelized in their own juices. I included eggplant and asparagus too! Forgot the lemon, maybe on the leftovers, and it was delicious anyway.

Tortilla Casserole

Tasty and attractive! I added browned breakfast sausage, used 6 eggs and cut back the milk to one cup because my salsa was pretty juicy. It was delicious and the texture was perfect!

Blueberry Cream Muffins

Very tasty and very easy! I used half whole wheat flour, light sour cream and 1/3 c unsweetened applesauce with 2/3 c oil. One full dry pint of fresh blueberries. Very moist and sweet. Recipe made about 27 muffins. Would have been prettier with coarse sugar crystals sprinkled on top!

No Ordinary Meatloaf

I'm not a big meatloaf fan, but this was pretty good! I was concerned about so much salt since there is seasoning in the stuffing mix, but it was fine. I did use the whole package of stuffing mix (about 2 1/2 cups). Used garlic powder and some herbs from the pantry because I didn't have a garlic/herb blend. Had to cook it a lot longer to get to 160 degrees, but I was using a large toaster oven. Next time I will probably make 2 smaller loaves or meatloaf muffins for faster cooking.

Peaches 'N' Cream Muffins

I took the previous reviewer's hint on blending the cream cheese into the batter, but now they are just peach bran muffins. A little plain, but they used up some items I had in the fridge.
