Chilled Strawberry Soup

I thought this was just okay, not nearly as good as a strawberry soup recipe I used to make (but have since lost! Gah!). I added a bit of vanilla but I think the strawberry to milk ratio is a bit off; more fruit, less liquid for me next time.

Sushi-Inspired Tuna Salad

I have never in my life liked tuna, but I am a big sushi fan and this salad is incredible! I served mine on lettuce with a drizzle of soy sauce, and used half the wasabi suggested here. Next time I'll add minced avocado or carrots, too. Thanks for this gem!

Pasta Pomodoro

For all the ingredients that went into this, I'd have liked to taste some of them a bit more. This was very, very light, and, if served with a side (like the orange-glazed asparagus found here!), the four servings are more like eight! Not that having leftovers is a bad thing... it was just a lot of food. :)

Vegan Cupcakes

These were very moist, probably the best cupcakes I've ever had constistency-wise. They were a bit bland though; I'd recommend adding either cocoa powder or chocolate chips, or using a very strong-flavored icing (I used a whipped vanilla that tasted pretty much like the cupcakes).

Three Bean Salad

I halved the sugar and threw in a bit of garlic since I didn't have an onion on hand. I also used red wine vinegar instead. This really would make a great salad for a picnic, is in fact reminiscent of pasta salad with the oil-vinegar dressing. I for one was never a big fan of pasta salad, but this is a good vegetarian dish nutrition-wise, so in the future, I'll cut down on the dressing for a lighter flavor.

Brazilian Black Bean Stew

I left out the meat and added in another mango, as well as substituting the pepper for green onion. I was dubious about this going in, but I'd promised to try something new and exotic - and this was it! It looked and smelled amazing, with all the colors and veggies, but that was nothing compared to the taste. Soft and sweet, with a tiny bite every now and then. Even though I'm a vegetarian, I'm a sucker for sausage - I can only imagine how great this would be if made as is! My all time favorite stew. :)

Apple Butter I

As it is, this would make a very good ice cream topping, or topping for some other sort of dessert. It is creamy, rich and very sweet. I made another batch with half the sugar and cinnamon, and it was much more versatile (for those of us that like our creamy sweets to stay in the dessert realm) and far less painful to sugar-sensitive teeth. :)

Vegan Brownies

I used only 3/4 c. oil and these brownies came out with a very nice texture, not greasy or crumbly but still fairly moist. They are however a little tasteless; next time I'll try subbing some oil for applesauce and adding some chocolate chips.

Creamy Vegan Corn Chowder

Mine never thickened and so was more a thin soup than a chowder, but it was very, very good. I only used 1 1/2 cups of corn because that was all I had and it still came out tasting very much like corn (other reviewers have complained that there was not enough corn taste) - I just halved the spices. I also thought there was a bit too much oil. Very good for a cold day or a plain old cold. :)

To Die For Blueberry Muffins

These were the best from-scratch anythings I've ever made. :) I'll take other reviewers' advice next time and add some vanilla, because, while sweet, they definitely needed a little something more, and I suspect I mixed the batter a little too much as they were kind of heavy. They rose beautifully, though - these are very, very presentable.

Pineapple Orange Sorbet

I followed other reviewers suggestions and subbed 1 c. orange juice for pineapple juice and the taste was very good. But it took far longer than 2 hours to freeze, and came out more like a frozen slushie than a sorbet. Still, very tasty!

Baked Sweet Potato Sticks

These were alright, probably my favorite way to eat sweet potatoes - but I never was a big fan. They were very time consuming, and kind of limp and soggy. A great idea, but it definitely needs some tinkering.

Spinach Dip with Water Chestnuts

This was fantastic. Instead of the soup mix, because I didn't have any on hand, I substituted a tiny bit of the mayo and sour cream for ranch dressing, and I threw in a few pinches of a hodge podge of spices. For something healthier, I recommend subbing the sour cream for nonfat plain yogurt, which has about the same texture and a flavor that will be just as overpowered by the other flavors of the dip. This one's a keeper!

Chai Tea Mix

I love the idea of making my own tea, and this would make a great gift. However, for everyday use I prefer not to use all that powdered and instant stuff. I mixed the spices listed here and nutmeg as suggested, then added them to some weak coffee with french vanilla creamer. Not as quick and easy, but much more satisfying, as I mistrust "fast food".

Cake Balls

These tasted really, really good, but my chocolate covering came out all gooey even refrigerated overnight. I also had a hard time wrestling them off the toothpicks; a few of them crumbled even though I'd frozen them beforehand. A great recipe, but not as easy to make as it sounds.

Grilled Cheese Sandwich

I love grilled cheese (who doesn't?) but since I ate it as a kid I've developed an overpowering "health freak" attitude toward food. I used nonfat cheddar, whole wheat bread, and olive oil instead of butter. While healthy, the sandwich really wasn't the grilled cheese I was craving! Next time I'll add a thin slice of tomato like one of the other reviewers suggested, and see if I can't conjure up a few more veggies or spices to make it tastier. Three stars 'cause I can't bring myself to give anything as loaded with fat as this recipe is more than that.
