Chocolate Truffle Cookies with Sea Salt

I bought some dark chocolate sea salt from my local spice shop, and wanted something to make with it. These cookies were perfect! Everything turned out great...I love gooey cookies more than anything.

Mini Cheesecakes

These came out great, but it's kind of a pain if you make a traditional graham cracker crust and press it into the bottoms (which I did anyway). The rest was super easy though, and the recipe is versatile. This time I mixed in toffee bits. I took a bunch to my doctor's office, and then they understood why I have gained so much weight during my pregnancy!

Lemon Fluff Cake

So good! It had the perfect amount of sweetness and just the right amount of lemon flavor. I filled the layers with blackberry jam and topped it with lemon cream. It almost tasted like a brunch cake. I will definitely make this again.

To Die For Blueberry Muffins

Oh my God! This is by far the best blueberry muffin I've ever tasted! I was worried at first that the thickness of the batter would make them tough, but they came out perfect. The recipe made 9 regular sized muffins, and I used Chef Joy's brown sugar streusel recipe for the tops. The muffins were soft and not too sweet, and the tops were a bit crunchy and very sweet. A perfect combo! I will never look for another blueberry muffin recipe again.

Blueberry Lemon Bread

Very good recipe. If you don't want your blueberries to sink to the bottom, coat them in about 1 tablespoon of flour and let them sit while you prepare the rest of the batter. Thanks for the recipe!

Praline French Toast

This is so good! Southerners love anything praline! I just had to decrease the oven temp to 350 so the bottoms wouldn't burn, and flipped the bread halfway through. It may just be my oven though...everything I bake has to be on a lower temp and for less time.

I made this cheesecake and brought the leftovers to work the next day. It was so good that one of my co-workers offered me $30 to make one for him! Of course I'm going to do it. It was easy to make and beautiful on the plate. Thanks for the recipe!

Blueberry Pie

This is a really good, easy recipe for blueberry pie. I had to use half blueberries and half strawberries, but it worked just fine. I couldn't actually taste the strawberries, but the texture was perfect. I will use this recipe again.

Eggnog Cheesecake II

This cheesecake would have been perfect if I had used actual rum instead of rum extract. Three tablespoons of extract was WAY too much. Don't do what I did! Other than my mistake though, this is a good cheesecake recipe. The crust was good, and the cake itself didn't crack and had a good, heavy texture. I will make it again this Christmas, but will either use real rum or only 1 tablespoon of extract.

Oatmeal Peanut Butter Cookies

I was looking for the best peanut butter cookie recipe, and I found it. They turned out crispy on the outside and chewy in the inside. I also only baked them for 8 minutes so they would stay soft, since cookies continue to bake on the pan when out of the oven. This one is a keeper...no modifications on ingredients necessary.
