Definite keeper! I used chicken broth rather than the water, mild enchilada sauce but added some spice by doing 1/2 of the chopped green chile peppers and 1/2 spicy jarred jalapenos. It was just the right amount of kick! I also used 1 can of diced tomatoes rather than whole mashed. The tortilla strips, cheese and sour cream brought it all together. I also added black beans after the soup to my own portion after the soup was done because my husband does not like them. They were also a great addition.
