About this Cook
Hi, I'm Beth! Food is one of life's greatest pleasures in my opinion. Sharing it with friends, family, and others builds community.
My favorite things to cook
I like things that are quick, easy, economical, full of flavor, and 'company worthy'. We have some dishes that we traditionally serve for certain occasions so we try and adhere to keeping those things on the respective menus.
My favorite family cooking traditions
My husband loves my (and only my) potato salad. As soon as the weather warms up and we can grill outside, he wants a batch of potato salad whipped up. He'll eat it 3 times a day until it's gone! I also have to make our family recipe for gelatin salad every year for Thanksgiving. Also on that menu is my cranberry relish and my sausage/apple/onion stuffing. We enjoy deep fried turkey though brined and roasted turkey is darn good too! Fall also means lots of soups, chowder, and chili. Christmas is the perfect excuse to indulge our sweet tooths and share goodies with family and friends!
My cooking triumphs
Now that my daughter is grown and with a family she occasionally calls or texts me wanting 'that really good recipe for __________ that you always made, Mom!'. It makes me feel good that she has fond memories of growing up and a desire to incorporate our family traditions into her own home.
My cooking tragedies
A while back I had a hankering for chicken green enchiladas. Well, I followed the recipe but somehow they were just inedible! We threw the whole pan out and hubby went out and brought In-N-Out home. Now recently one of our male nurses brought in some chicken enchiladas to share and they were delicious. Just gotta pin him down on his recipe now!

Chef John's Dutch Babies
Made this last weekend for the grandkids. When I've got the children I prefer quick dishes with short ingredient lists and that don't require me to be in the kitchen long. Also, fewer carbs in this than traditional pancakes. Very tasty and we all enjoyed it! Pretty presentation, too.

Bread Machine Rolls
Great, easy recipe! I didn't have any powdered milk on hand so just used 1 cup of milk in place of the water. Also, went ahead and used a whole egg for the wash before baking. Really nice color and shine on the finished rolls. Definitely a recipe I'll keep and use again.

A-Number-1 Banana Cake
I used kefir instead of buttermilk and it turned out just delicious! Also used chocolate chips instead of nuts. Having the first piece right now while it's still warm. It is delicious, and one for the 'keeper' file!
