Sauteed Corn on the Cob With Chili-Lime-Cilantro Spread

I added WAY more cilantro and a generous amount of Lowry's seasoing salt. It was great! I could use regular sour cream next time though. I also just boiled the corn and omitted the butter.

Mad Hatter Salad

This was really really great! I didnt have a slaw mix so i chopped 1/4 head of cabbage and it worked fine. The only thing i may change about this recipe id that it is a little on the sweet side so i'd omit some sugar, and maybe add a little more vinegar.

Easy Broccoli Quiche

I followed the recipe closely the first time and it was ok. The second time, it was much much better. I used only 1 c. milk and reduced the cheese and butter in half. I also added in some chopped ham. I would prebake the crust for 10 mins though and the put foil around the edges because the crust had an uneven consistency - the bottom was soggy and the top part was perfect. I baked it for 40 mins. Yum yum! We ate the whole thing in one meal too :) I'm making this again next week for sure.

Red Velvet Cupcakes

I loved this cake. It was so moist and dense, just the way I like it. However, the frosting was not good. I am NOT a fan of cream cheese frosting at all and that's probably why I didn't like it. So we just ate the cupcakes without frosting and they were good. I also sprinkled mini chocolate chips on the cupcakes that added a richness of chocolate to them. Next time I'll add more.

Double-Cheese Eggs Benedict

Baked Soy Lemon Chops

Chicken Stir-Fry

This was good, but it took a LONG time for the liquid to thicken, so I had to add more cornstarch. It was also a little bland so I added more seasonings and chicken buillon. Then, I served it with brown rice and it was so good and nutritious! I am going to have to make this a lot more.

The Best Pesto Ever

This was great! I used it with a creamy chicken pasta dish and it tasted amazing. However I did omit the romano cheese and pine nuts because I didn't have any on hand but I probably couldn't tell the difference.

Easy Chicken Enchiladas

It was yummy. But I don't like my more meaty and less creamy so I would definately add lots more chicken next time. I also liked that I added lots of salsa on top of the enchiladas for more flavor.
