Sassy Steak Marinade and Sauce

So great! The second time I made it I added a whole onion as well. I broiled my steak for 5 minutes on each side (medium rare). Yummy!!

Too Much Chocolate Cake

Really great! I used unsweetened applesauce instead of oil; egg beaters instead of eggs, fat free sour cream, sugar free pudding, and mini choc. chips. It was really rich, so next time I will try a 1/4 less applesauce and a 1/4 less choc. chips. This was my first time baking with the lower fat ingredients, and you really can't tell the difference. It's def. worth saving the calories!

Corn Dip II

love this! Good cold or hot. I cut the recipe to 5 servings (1 can of mexicorn) and use a little less sour cream and mayo - 1/4 cup each instead of 1/3 cup.

Bow Ties with Sausage, Tomatoes and Cream

I followed the recipe exactly and thought this was very good. The boyfriend even went back for seconds, which he never does! Next time I will try it with substitutions (half and half, etc) to make it a little healthier. update: I tried this again with fat free half and half and it was still fantastic!!

Broccoli with Garlic Butter and Cashews

Insanely good! I made the broccoli using one of those steam bags in the microwave. This made a lot of sauce (excess in the bottom of the broccoli dish), so next time I will try pouring 1/2 on at first to save calories. I could take or leave the cashews, but the recipe overall is definitely a keeper. Thanks!

Spaghetti Carbonara II

Really great! I used 1 and 1/2 times the bacon called for and 3/4 cup of heavy cream based on other user reviews. I also followed the advice of others and mixed the parm and eggs before pouring on the pasta. I was nervous about my ability to pull this off, but it worked out wonderfully. Thanks for a great recipe!

Quick Quiche

WOW! The best quiche! So super yummy. I added tomatoes last time and plan on adding mushrooms next time. I used fat free milk, low fat swiss cheese and egg beaters. Thanks so much for this awesome recipe.

Ham with Honey and Brown Sugar Glaze

This was fantastic. I was scared to make a ham because often I find that they are salty. Not with this recipe though! Everyone raved about how good it was. My mother said she is not a big fan of ham, but loved it cooked this way.

Chicken Milano

This was really great. The whole family raved about it. I used bow tie pasta. Next time I will try making the sauce ahead of time as other reviewers suggested. I took Mandy H.'s advice and: I sauteed the garlic in olive oil for 30 seconds and then added to the same pan sliced chicken breast that I had dredged in a flour/paprika mixture. I wanted the chicken to cook quickly. When the chicken was nearly cooked through, I added mushrooms and the sundried tomatos. After a couple of minutes I added the chicken broth. I let the liquid reduce for a bit and then added the heavy cream, the basil and a handful of parmesan cheese. I turned the heat down very low so that the sauce would simmer but not boil in order to allow the sauce to thicken and avoid separation. The sauce thickened up very nicely using this method. I also noted that the sauce thickened considerably after it had cooled down. I cooked the pasta to al dente and allowed it to sit in the sauce for a little while.

Ultimate Steak Sandwich

This was awesome! I used eye of round steak and was worried that the meat might be tough but the sandwiches were great. Really I think any steak you like would work with this. The dressing is what really makes the meal.

Best-Ever Meatloaf

Super easy and yummy. Even the picky boyfriend liked it. I didn't care for the tomato soup sauce that it's served with though. Next time will experiment with just adding the rest of the soup to the loaf.
