Hand Held Hashbrown Casseroles

Reviewed: Jul. 14, 2011
These are a good, basic breakfast. Nothing spectacular, but good. My only alteration was to use bacon instead of ham.

Bob's Mexican Stuffed Chicken

Reviewed: May 13, 2011
I didn't include mushrooms and used tortilla chips instead of corn flakes. It was good but not awesome. For the amount of prep work involved I don't think it's really worth it.

This was okay. I've never had a loose meat sandwich. Tried with chicken broth and a little bit of worcestershire.

Tastes great! To make it easier I made thin onion rings. Next time I will cut the onion wider.

Quick and Easy Mexican Chicken

Reviewed: Oct. 25, 2010
I followed the recipe except that I used garlic powder instead of a clove and added refried beans when I baked it. Very simple and yummy.

Ty's Barbequed Chicken

Reviewed: Aug. 25, 2010
I baked the chicken at 350 for 50 minutes. Really juicy and a great flavor. I would love to find a way to thicken the sauce though.

Turkey Sausage Breakfast

I used regular sausage and egg beaters; tasted great. I might try sauteing some onions instead of using green onions next time.

Pasta Lasagna

Made this with double the meat. Next time I will use more sauce and add some seasonings as it was a bit bland. Good overall though.

BBQ Country Style Ribs

Reviewed: Jun. 1, 2010
I took reviewer Sande's advice - I covered bottom of pan in 1/16" water, sealed tightly with foil and cooked ribs 2 hrs. at 300. I then opened foil and drained all juices off. I covered ribs in 18 oz of BBQ sauce and 1 tsp. dried onion flakes. I then replaced foil and cooked at 275 for another 40 minutes.

Chicken Milano

Reviewed: Jan. 6, 2010
This was really great. The whole family raved about it. I used bow tie pasta. Next time I will try making the sauce ahead of time as other reviewers suggested. I took Mandy H.'s advice and: I sauteed the garlic in olive oil for 30 seconds and then added to the same pan sliced chicken breast that I had dredged in a flour/paprika mixture. I wanted the chicken to cook quickly. When the chicken was nearly cooked through, I added mushrooms and the sundried tomatos. After a couple of minutes I added the chicken broth. I let the liquid reduce for a bit and then added the heavy cream, the basil and a handful of parmesan cheese. I turned the heat down very low so that the sauce would simmer but not boil in order to allow the sauce to thicken and avoid separation. The sauce thickened up very nicely using this method. I also noted that the sauce thickened considerably after it had cooled down. I cooked the pasta to al dente and allowed it to sit in the sauce for a little while.

Ham with Honey and Brown Sugar Glaze

Reviewed: Dec. 28, 2009
This was fantastic. I was scared to make a ham because often I find that they are salty. Not with this recipe though! Everyone raved about how good it was. My mother said she is not a big fan of ham, but loved it cooked this way.
